Creme De Menthe Brownies are so mouthwateringly good! These amazing brownies include mint chocolate baking chips for a delightful minty flavor along with a dose of chocolate. They're terrific for holiday or tailgating parties, Christmas Cookie Exchanges, potlucks or anytime you want a rich, chocolaty, decadent dessert. Equipment

  • 1 11x17" jelly roll pan
  • 1 large mixing bowl
  • 1 sauce pan
  • 1 whisk
  • 1 wooden spoon
  • measuring cups

Ingredients
  

BROWNIES:

  • 3/4 cup cocoa
  • 2 1/2 sticks unsalted butter melted (1 ¼ cups)
  • 2 cups granulated sugar
  • 1 1/2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
  • 4 large eggs
  • 24 oz. bags mint chocolate baking chips (or crème de menthe baking chips) (two 12-ounce bags)

FUDGE ICING:

  • 3 tbsp. unsalted butter melted (see note below)
  • 2 tbsp. cocoa
  • 2 cups powdered sugar
  • 3 tbsp. half-and-half or as needed
  • 1 dash sea salt
  • 1 tsp. vanilla extract

Instructions
 

BROWNIES:

  • Combine cocoa, butter, granulated sugar and eggs in a mixing bowl and whisk until smooth.
  • Add flour and mint chocolate baking chips; stir thoroughly.
  • Spread mixture into a greased 11x17” jelly roll pan.
  • Bake at 350° for 25-35 minutes or until a toothpick inserted in center comes out clean.
  • Cool completely before adding icing.

FUDGE ICING:

  • Cook butter and cocoa for 1-2 minutes on medium heat in small sauce pan.
  • Remove from burner.
  • Add powdered sugar and half-and-half to taste.
  • Then add a dash of salt and vanilla.
  • Whisk until smooth.
  • Ice cooled brownies.
  • Refrigerate a few hours before cutting into serving pieces.

Notes

NOTE: Double the icing recipe for this size pan.
