Creme De Menthe Brownies
My, oh my! Creme De Menthe Brownies sure are awesome. These amazing brownies include creme de menthe baking chips in the batter for a full minty taste. Then they’re iced with a chocolate fudge frosting. A-M-A-Z-I-N-G!!! If you enjoy ooey, gooey brownies, this one is just what the doctor ordered! Plus, it’s a marvelous dessert for holiday baking.

I made these Creme De Menthe Brownies in September and gave them to John’s Day Neuro staff. I’ve tried to send in goodies every week while John has been in rehab. The staff love the treats and enjoy being spoiled a little bit. If you enjoy mint and chocolate together (like my favorite Chocolate Mint Ice Cream) you will be overjoyed with every bite of these jewels.

Creme De Menthe Brownies should be on the top of your baking list this holiday season.
Here’s what I did.
I used these ingredients for the brownies.
Melt butter.
Add sugar, cocoa and eggs.
Whisk to combine.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add creme de menthe baking chips.
Stir ingredients to combine.
Spread mixture into a greased 12×19″ cookie sheet. Bake at 350 degrees for 25-35 minutes or until a toothpick inserted in center comes out clean.
I used these ingredients for the fudge icing.
Melt butter in a saucepan over low heat. Add cocoa.
Stir until butter is melted. Remove from heat.
Add half-and-half, a dash of salt and powdered sugar.
Stir until combined.
Add vanilla.
Stir again.
Spread icing over top of cooled brownies.
Refrigerate a few hours before cutting into bars.

CREME DE MENTHE BROWNIES

Creme De Menthe Brownies
Equipment
- 1 11x17" jelly roll pan
- 1 large mixing bowl
- 1 sauce pan
- 1 whisk
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 spatula
Ingredients
BROWNIES:
- 3/4 cup cocoa
- 2 1/2 sticks unsalted butter melted (1 ¼ cups)
- 2 cups granulated sugar
- 1 1/2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
- 4 large eggs
- 24 oz. bags mint chocolate baking chips (or crème de menthe baking chips) (two 12-ounce bags)
FUDGE ICING:
- 3 tbsp. unsalted butter melted (see note below)
- 2 tbsp. cocoa
- 2 cups powdered sugar
- 3 tbsp. half-and-half or as needed
- 1 dash sea salt
- 1 tsp. vanilla extract
Instructions
BROWNIES:

- Add flour and mint chocolate baking chips; stir thoroughly.
- Spread mixture into a greased 11x17” jelly roll pan.
- Bake at 350° for 25-35 minutes or until a toothpick inserted in center comes out clean.
- Cool completely before adding icing.
FUDGE ICING:
- Cook butter and cocoa for 1-2 minutes on medium heat in small sauce pan.
- Remove from burner.
- Add powdered sugar and half-and-half to taste.
- Then add a dash of salt and vanilla.
- Whisk until smooth.
- Ice cooled brownies.
- Refrigerate a few hours before cutting into serving pieces.
