Autumn Apple Salad

If you're looking for picnic fare, look no farther than this scrumptious Autumn Apple Salad. It's a congealed salad that includes apples, pineapple, celery, walnuts, cream cheese and Cool Whip. It's fantastic for backyard barbecues, potlucks or any time you've got the grill going. This is a great side dish for company since it can be prepared in advance. Excellent option for Fourth of July or Labor Day fare.

20 oz. can crushed pineapple undrained 2/3 cup granulated sugar 3 oz. pkg. lemon-flavored gelatin 8 oz. pkg. cream cheese softened 1 cup apples diced, unpeeled (I used Pink Ladies, but any sweet apple will work) 3/4 cup walnuts chopped (measure after chopping) 1 cup celery chopped 1 cup non-dairy whipped topping (Cool Whip or any store brand) 9 lettuce leaves
In a medium saucepan, combine pineapple and sugar; bring to a boil and boil for 3 minutes.
Add gelatin; stir until dissolved.
Add cream cheese; stir and whisk until mixture is thoroughly combined.
Remove from heat.
Cool in pan in refrigerator about 2 hours (or freeze about 45-60 minutes to cool mixture).
Fold in apples, nuts, celery and whipped topping.
Pour into a 9-in. square baking dish.
Chill until firm about 2 hours in refrigerator or about 30 minutes in freezer.
Cut into squares and serve on lettuce leaves.
BE PREPARED : This recipe needs at least 4 hours refrigeration before serving.
