If you're looking for picnic fare, look no farther than this scrumptious Autumn Apple Salad. It's a congealed salad that includes apples, pineapple, celery, walnuts, cream cheese and Cool Whip. It's fantastic for backyard barbecues, potlucks or any time you've got the grill going. This is a great side dish for company since it can be prepared in advance. Excellent option for Fourth of July or Labor Day fare.

Equipment

  • 1 medium sauce pan
  • 1 9-inch glass serving dish
  • 1 whisk
  • 1 wooden spoon
  • measuring cups
  • measuring spoons
  • 1 sharp knife
  • 1 cutting board

Ingredients
  

  • 20 oz. can crushed pineapple undrained
  • 2/3 cup granulated sugar
  • 3 oz. pkg. lemon-flavored gelatin
  • 8 oz. pkg. cream cheese softened
  • 1 cup apples diced, unpeeled (I used Pink Ladies, but any sweet apple will work)
  • 3/4 cup walnuts chopped (measure after chopping)
  • 1 cup celery chopped
  • 1 cup non-dairy whipped topping (Cool Whip or any store brand)
  • 9 lettuce leaves

Instructions
 

  • In a medium saucepan, combine pineapple and sugar; bring to a boil and boil for 3 minutes.
  • Add gelatin; stir until dissolved.
  • Add cream cheese; stir and whisk until mixture is thoroughly combined.
  • Remove from heat.
  • Cool in pan in refrigerator about 2 hours (or freeze about 45-60 minutes to cool mixture).
  • Fold in apples, nuts, celery and whipped topping.
  • Pour into a 9-in. square baking dish.
  • Chill until firm about 2 hours in refrigerator or about 30 minutes in freezer.
  • Cut into squares and serve on lettuce leaves. 

Notes

BE PREPAREDThis recipe needs at least 4 hours refrigeration before serving.
