
Autumn Apple Salad

I don’t make congealed salads very often anymore, but I’m sure glad I tried this recipe! Autumn Apple Salad includes apples, pineapple, celery, walnuts, cream cheese, lemon-flavored jello and Cool Whip. It’s a creamy version of a jello salad and really sets up very well. You’ll notice from my pictures that the apple slices on top of the salad didn’t sink into the salad but laid nicely on top. If you enjoy fruity salads, this one can be served as a side dish or dessert!

It’s fairly straight-forward in directions and is refrigerated before it’s ready to serve. It’s a great recipe to make if you need something to prepare ahead of time. It needs two separate two-hour refrigeration times for a total of four hours in the refrigerator before it’s ready to serve. But the outcome is terrific. Cut the dessert in squares and serve over beds of lettuce. All in all, it’s a very pleasing recipe.
I made a meal for some neighbors the first week of January. Actually, there was enough that I also provided a small meal for some other neighbors who live only a few doors down from us too! I whipped up a batch of Baked Penne, but instead of making it gluten free and meatless, I used regular pasta and added ground beef. I also made my standard bread-maker bread which everyone can never get enough of! I topped the meal off with a Lemon-Sauced Gingerbread and this delightful salad. Both families loved the meal and since they both had family members just getting out of the hospital, it worked really well for both of them.
This is a great salad for Fourth of July or Labor Day picnics. It’s also great for Family Reunions, potlucks or backyard barbecues. It pairs well with hamburgers and hotdogs, grilled chicken or steaks or even brisket or ribs. If you enjoy fruity salads, you’ll really like this one.

This congealed salad uses fresh apples, pineapple, celery, walnuts, cream cheese and Cool Whip.

Autumn Apple Salad is also marvelous for potlucks and Backyard Barbecues.
Here’s what I did.

I used these ingredients.

In a medium saucepan, combine pineapple and granulated sugar.

Stir and bring to a boil for three minutes. Whisk constantly.

Add Lemon-flavored Jell-O and stir until dissolved.

Add cream cheese.

Stir and whisk mixture until thoroughly combined.

Remove from heat and refrigerate for two hours.

After salad has been in the refrigerator for 2 hours, remove from refrigerator.

Add apples, celery, walnuts and Cool Whip.

Stir ingredients well to combine.

Pour mixture into a 9-inch square baking dish. Refrigerate again for at least 2 more hours.

Remove from refrigerator just before serving. Cut in 9 squares to serve.

Place salad squares on lettuce leaves to serve.

Autumn Apple Salad
Equipment
- 1 medium sauce pan
- 1 9-inch glass serving dish
- 1 whisk
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 sharp knife
- 1 cutting board
Ingredients
- 20 oz. can crushed pineapple undrained
- 2/3 cup granulated sugar
- 3 oz. pkg. lemon-flavored gelatin
- 8 oz. pkg. cream cheese softened
- 1 cup apples diced, unpeeled (I used Pink Ladies, but any sweet apple will work)
- 3/4 cup walnuts chopped (measure after chopping)
- 1 cup celery chopped
- 1 cup non-dairy whipped topping (Cool Whip or any store brand)
- 9 lettuce leaves
Instructions
- In a medium saucepan, combine pineapple and sugar; bring to a boil and boil for 3 minutes.
- Add gelatin; stir until dissolved.
- Add cream cheese; stir and whisk until mixture is thoroughly combined.
- Remove from heat.
- Cool in pan in refrigerator about 2 hours (or freeze about 45-60 minutes to cool mixture).
- Fold in apples, nuts, celery and whipped topping.
- Pour into a 9-in. square baking dish.
- Chill until firm about 2 hours in refrigerator or about 30 minutes in freezer.
- Cut into squares and serve on lettuce leaves.
