Chunky Apple Molasses Muffins is a vintage-style down-home recipe that's perfect to spice up your day! These lovely muffins include chunks of apple, molasses and cinnamon providing texture and flavor that's hard to beat. Marvelous for a weekend, company or holiday breakfast, but also delightful for snacks, tailgating parties or potlucks!
2cupsGala applespeeled, cored and diced (one large apple)
1/2cuphalf-and-half
1/4cupcanola oilor avocado oil
1/4cupmolasses
1largeegg
Instructions
Preheat oven to 400°.
Spray 28 miniature muffin tins with cooking spray; set aside.
Combine flour, granulated sugar, baking powder, cinnamon and salt in a large mixing bowl.
Add apple and stir well to distribute apple evenly in flour mixture.
Set aside.
In a small mixing bowl, combine half-and-half, oil, molasses and egg and beat with a whisk until very well combined.
Add wet mixture to dry mixture and stir just until ingredients are moistened.
Fill miniature muffin tins with batter.
Bake at 400° for about 12-13 minutes, or until a toothpick inserted in center comes out clean.
Cool muffins in tins for about 5 minutes before removing from pans.
Serve warm.
Notes
NOTE: Blackstrap molasses is not recommended for this recipe.NOTE: Miniature muffins usually only take about 8 minutes to bake at this temperature. Mine took 13 minutes. Start checking after 8 minutes in case your oven runs hotter than mine.NOTE: Makes about 8-10 regular sized muffins. Bake at 400° for 17-18 minutes, or until a toothpick inserted in center comes out clean.
