
Chunky Apple Molasses Muffins
Chunky Apple Molasses Muffins is a vintage-style down-home recipe that’s perfect to spice up your day! These lovely muffins include chunks of apple, molasses and cinnamon providing texture and flavor that’s hard to beat. While I used Gala apples, you can use any apple you have on hand. I prefer sweeter apples and rarely use Granny Smiths or sour apples (even though they’re supposed to be better for baking). 😉

I found this recipe in a Taste of Home cookbook featuring a recipe from the Washington Apple Commission. I thought it would be perfect to bring along to our Hostess Committee at church, one Sunday morning last fall. Yes, everyone wanted to try a bite! They really enjoyed the depth of flavor from the molasses and cinnamon. My husband likes fruit in any type of muffin/bread or cake. No dry food for him! These muffins turned out really well.
If you have an abundance of apples on hand, this is a great way to enjoy them and use them up! You can bake the muffins up in regular or miniature-sized muffin tins. They work well either way. Pass them out at potlucks, tailgating parties or anytime you have to sit through a sports practice with your kids. Yum.

Every bite includes bits of apple along with cinnamon and molasses to flavor it.

Chunky Apple Molasses Muffins will hit the spot!
Here’s what I did.

I used these ingredients.

Place unbleached flour in a mixing bowl (bleached flour toughens baked goods). Add granulated sugar, salt, baking powder and cinnamon.

Stir well to combine.

Add apple pieces.

Stir to combine; set aside.

In a medium mixing bowl, combine oil, molasses, egg and half-and-half.

Whisk ingredients until well-combined.

Add molasses mixture to flour-apple mixture.

Stir ingredients, just until combined. Do NOT overmix the batter.

Spray muffin tins with cooking spray. Spoon batter into prepared muffin tins about 3/4 full.

Bake at 400 degrees for approximately 12-13 minutes, or until a toothpick inserted in center comes out clean. Your oven may cook more quickly, start checking after 8 minutes.

Allow muffins to cool in pan about 5-10 minutes before removing to wire rack to cool completely. Transfer to serving basket or serving platter. (Or serve warm!

CHUNKY APPLE MOLASSES MUFFINS

Chunky Apple Molasses Muffins
Equipment
- 1 24-tin muffin pan (plus a smaller one for four more muffins)
- 1 large mixing bowl
- 1 medium mixing bowl
- 1 whisk
- 1 wooden spoon
- 1 paring knife to pare and dice apples
- 1 cutting board
- measuring cups
- measuring spoons
Ingredients
- 2 cups unbleached all-purpose flour (bleached flour toughens baked goods)
- 1/2 cup granulated sugar
- 1 tbsp. baking powder (tablespoon NOT teaspoon)
- 1 tsp. ground cinnamon
- 1/4 tsp. sea salt
- 2 cups Gala apples peeled, cored and diced (one large apple)
- 1/2 cup half-and-half
- 1/4 cup canola oil or avocado oil
- 1/4 cup molasses
- 1 large egg
Instructions
- Preheat oven to 400°.
- Spray 28 miniature muffin tins with cooking spray; set aside.
- Combine flour, granulated sugar, baking powder, cinnamon and salt in a large mixing bowl.
- Add apple and stir well to distribute apple evenly in flour mixture.
- Set aside.
- In a small mixing bowl, combine half-and-half, oil, molasses and egg and beat with a whisk until very well combined.
- Add wet mixture to dry mixture and stir just until ingredients are moistened.
- Fill miniature muffin tins with batter.
- Bake at 400° for about 12-13 minutes, or until a toothpick inserted in center comes out clean.
- Cool muffins in tins for about 5 minutes before removing from pans.
- Serve warm.Â
