
Rosemary Garlic Potatoes

Rosemary Garlic Potatoes is a scrumptious 4-ingredient recipe that’s the perfect side dish for steak, chicken or fish. I used Yukon gold potatoes because they are so much more flavorful than russets. Toss the potatoes with crushed rosemary and garlic powder and then spray the potatoes with olive oil before baking. That’s it. So simple. Yet, so tasty.

Back last May, I cooked up a Honey-Dijon Chicken recipe along with these Rosemary Garlic Potatoes for dinner one night. Both recipes were baked in the oven and both were easy and delicious. They also reheated wonderfully as well as being healthier, gluten free, vegan and not super-high in calories. I mean, who doesn’t like a four-ingredient recipe??
If you’re looking for a great side dish recipe, but don’t have time to spend hours in preparation, this is the side dish for you. It took about 8-10 minutes to have it oven ready. Then you basically forget about it until you need to take it out of the oven. You have time to pop both dishes in the oven and then attend to other chores while dinner is cooking. I like those “fix-it and forget-it” recipes. I think you will too!

Rosemary Garlic Potatoes are so easy to whip up.

This easy 4-ingredient recipe can be tossed together and oven ready in about 8-10 minutes.

I like using Yukon Gold Potatoes because they have a much richer flavor than russet potatoes which are quite bland.
Here’s what I did.

I used these ingredients.

Wash potatoes and cut down like you would for steak fries.

Toss potatoes into a large mixing bowl.

Sprinkle crushed rosemary and garlic powder over top.

Toss well to coat.

Spread seasoned potatoes into a greased 10×15″ or 9×13″ glass baking dish. Spray with olive oil.

Now the potatoes are ready for the oven.

Bake at 400 degrees for 40-45 minutes.

I served Rosemary Garlic Potatoes with Honey-Dijon Chicken and fresh fruit.

I prefer to cook the potatoes in a larger shallow pan so the potatoes aren’t scrunched together. They cook more evenly and quickly that way.

ROSEMARY GARLIC POTATOES

Rosemary Garlic Potatoes
Equipment
- 1 10×15" glass baking dish or 9×13" glass baking dish
- 1 large mixing bowl
- 1 wooden spoon
- measuring spoons
- 1 sharp knife to cut vegetables
- 1 cutting board
Ingredients
- 2 lbs. Yukon gold potatoes (preferred over russet potatoes)
- 1 1/2 tsp. dried rosemary leaves
- 1 tsp. garlic powder
- 2 tbsp. olive oil or avocado oil
Instructions
- Wash and cut potatoes in wedges.
- Place in a large mixing bowl.
- Sprinkle with rosemary and garlic and toss well to combine.
- Place potatoes in a greased 10×15” baking dish.
- Drizzle or spray potatoes with olive oil.
- Bake at 400º approximately 40-45 minutes, or until potatoes are fork tender.
- Serve immediately.
