Honey Mustard Baked Chicken

Honey Mustard Baked Chicken is an easy, no-fuss, 6-ingredient chicken entree. It's great for week night dinners when you're scrambling to manage your time. This tasty recipe includes honey, mustard and curry powder to give it some pizzazz. It's also a scrumptious way to enjoy chicken thighs or other chicken parts. Gluten free.

Equipment

  • 1 10x15" baking dish
  • 1 small sauce pan
  • 1 whisk
  • measuring cups
  • measuring spoons
  • 1 pastry brush or basting brush

Ingredients
  

  • 10 chicken thighs
  • 1/4 cup salted butter (1/2 stick)
  • 1/4 cup honey
  • 2 tbsp. Dijon mustard
  • 1/2 tsp. curry powder
  • 1/4 tsp. sea salt (I prefer using about one teaspoon of Celtic Baja gold sea salt)

Instructions
 

  • Place chicken thighs in a 10x15” glass baking dish.
  • Bake chicken at 350° for 30 minutes.
  • Drain any juice.
  • Meanwhile, in a saucepan, melt butter. 
  • Add remaining ingredients and stir to combine.
  • Heat through. 
  • Brush glaze over top of chicken thighs (after baking 30 minutes and draining juice).
  • Bake at 350° for approximately 30 more minutes.
  • Turn chicken pieces over and baste the other side with the glaze.
  • Cook an additional 15 minutes, or until juices run clear when chicken is pricked with a fork.
  • If you have any remaining sauce, baste chicken again. 

Notes

NOTE: Do not crowd the chicken in the baking dish. Use two smaller dishes if necessary.
 
NOTE: You can also grill the chicken and use the honey-mustard sauce as a marinade to baste the chicken.
 
NOTE: While the original recipe only says to heat the sauce ingredients together until the butter melts, I prefer to actually bring the mixture to a boil (over low heat) and cook until the mixture thickens--about 10 minutes. I think the basting sauce is much better tasting made this way.
