I’m always looking for new ways to bake chicken, so when I found this Honey Mustard Baked Chicken recipe I thought i’d give it a try. I made this EASY 6-ingredient recipe with chicken thighs, rather than chicken breasts or a whole, cut-up chicken. I liked the simplicity of this recipe especially for week night dinners when you’re trying to whip up something rather quickly.

Last June, about a week before Father’s Day, I made a batch of this tasty Honey Mustard Baked Chicken. I added Seasoned Oven Fries and Skinny Roasted Vine-Ripe Tomatoes. One of the nice things I noticed about this entree is that it reheats nicely. I tossed it in my toaster oven for about 10 minutes and it was great reheated as leftovers. I’ve never been able to eat chicken that’s microwaved to heat it up. But if it’s rebaked or roasted in the oven or toaster oven it doesn’t have an odd taste. So that’s what I do.

Honey Mustard Baked Chicken is an easy “No-Fuss” recipe that’s great for week night dinners.

This entree is a great way to use chicken thighs in a recipe.

I served it with Skinny Roasted Vine-Ripe Tomatoes and Seasoned Oven Fries.

When you‘re scrambling to make dinner on busy week nights, this easy 6-ingredient recipe is a great option.
Here’s what I did.

I used these ingredients.

Melt butter in a sauce pan over medium heat.

Add honey.

Add mustard.

Add curry powder and salt.

Whisk ingredients to combine. Heat through.

Place chicken pieces in a 10×15″ glass baking dish. Bake at 350 degrees for 30 minutes.

Drain chicken. Then brush chicken pieces with Honey Mustard sauce. Bake 30 minutes longer.

Turn chicken pieces over and baste remaining side. Bake 15 minutes longer before removing from oven.

Serve straight from the oven, or transfer chicken thighs to a platter to serve.

Honey Mustard Baked Chicken was delicious serve with Seasoned Oven Fries, Skinny Roasted Vine-Ripe Tomatoes and fresh cherries.

You can also grill the chicken and baste with the Honey Mustard Sauce, if you desire.

HONEY MUSTARD BAKED CHICKEN

Honey Mustard Baked Chicken
Equipment
- 1 10×15" baking dish
- 1 small sauce pan
- 1 whisk
- measuring cups
- measuring spoons
- 1 pastry brush or basting brush
Ingredients
- 10 chicken thighs
- 1/4 cup salted butter (1/2 stick)
- 1/4 cup honey
- 2 tbsp. Dijon mustard
- 1/2 tsp. curry powder
- 1/4 tsp. sea salt
Instructions
- Place chicken thighs in a 10×15” glass baking dish.
- Bake chicken at 350° for 30 minutes.
- Drain any juice.
- Meanwhile, in a saucepan, melt butter.
- Add remaining ingredients and stir to combine.
- Heat through.
- Brush glaze over top of chicken thighs (after baking 30 minutes and draining juice).
- Bake at 350° for approximately 30 more minutes.
- Turn chicken pieces over and baste the other side with the glaze.
- Cook an additional 15 minutes, or until juices run clear when chicken is pricked with a fork.
- If you have any remaining sauce, baste chicken again.
