Keto Buffalo Chicken Dip is marvelous! This amazing keto dip is made with four cheeses, including mozzarella, cheddar, cream cheese & blue cheese. The Buffalo flavored sauce makes this dip absolutely irresistible. This fantastic appetizer is perfect for tailgating parties, potlucks, company parties or even the Super Bowl! Lightly oil or spray a 9-inch deep dish pie plate.
Shred cooked boiled chicken or rotisserie chicken with two forks.
Set aside.
In medium-sized mixing bowl, combine softened cream cheese, sour cream and buffalo sauce.
Add chicken and combine again.
Stir in one cup each of mozzarella cheese and cheddar cheese.
Dice one green onion and stir into other ingredients.
Spread mixture into oiled pie plate.
Top with remaining half cup of mozzarella cheese and cheddar cheese.
Sprinkle blue cheese crumbles on top.
Bake at 350° for 15-20 minutes or until hot and bubbly.
Sprinkle remaining diced green onion over top.
Serve with bagel chips, crackers or veggies like celery or carrot sticks.
Notes
NOTE: You can use rotisserie chicken or boil down your own chicken. I put two boneless, skinless chicken breasts in a crockpot filled with water. After adding some salt and pepper, I boiled the chicken on high for 6 hours. Then after the chicken cooled a few hours, I shredded the chicken with two forks before refrigerating and using in this recipe.
