Keto Buffalo Chicken Dip is awesome – no exaggeration. This amazing dip uses four cheeses! Cheddar cheese, mozzarella cheese, blue cheese and cream cheese. Plus, it uses chicken (of course) and a little bit of Buffalo Chicken sauce. Add a few green onions for good measure and you have an appetizer that everyone will drool over.

We went to our Thursday night Bible Study/Connection group a few months ago. Donna wanted to try out some new sliders that she wanted to make for the Super Bowl. Everyone else brought sides. I wanted to see if I could find something really easy and I stumbled across this recipe. I decided to try to make a sample batch of about a third of the recipe to try it out. Well the sample batch turned out fantastic, so I made it for that night. Everyone came up to me afterwards saying how much they loved the recipe.

Keto Buffalo Chicken Dip is a terrific appetizer for holidays, tailgating parties, potlucks and anytime you’re gathering together with friends. It’s also great reheated so leftovers are also pretty tasty. I served it with bagel chips and assorted crackers. But this is also wonderful with fresh veggies. This fantastic appetizer should be on your menu the next time you have a party. Watch it disappear!

Keto Buffalo Chicken Dip is marvelous! This amazing keto dip is made with four cheeses, including mozzarella, cheddar, cream cheese & blue cheese. The Buffalo flavored sauce makes this dip absolutely irresistible. This fantastic appetizer is perfect for tailgating parties, potlucks, company parties or even the Super Bowl! If you enjoy Buffalo Chicken, you'll rave over this amazing dip. Great for diabetics too. Gluten free.

Ingredients
  

  • 2 cups shredded chicken
  • 8 oz. pkg. cream cheese softened
  • 1/3 cup Buffalo sauce (Moore's and Frank's are low carb)
  • 1/4 cup sour cream
  • 1 1/2 cups mozzarella cheese shredded, divided use
  • 1 1/2 cups sharp cheddar cheese shredded, divided use (or substitute Mexican Fiesta blend cheese)
  • 2 large green onions sliced, divided use
  • 3 tbsp. blue cheese crumbles

Instructions
 

  • Preheat oven to 350°.
  • Lightly oil or spray a 9-inch deep dish pie plate.
  • Shred cooked boiled chicken or rotisserie chicken with two forks.
  • Set aside.
  • In medium-sized mixing bowl, combine softened cream cheese, sour cream and buffalo sauce.
  • Add chicken and combine again.
  • Stir in one cup each of mozzarella cheese and cheddar cheese.
  • Dice one green onion and stir into other ingredients.
  • Spread mixture into oiled pie plate.
  • Top with remaining half cup of mozzarella cheese and cheddar cheese.
  • Sprinkle blue cheese crumbles on top.
  • Bake at 350° for 15-20 minutes or until hot and bubbly.
  • Sprinkle remaining diced green onion over top.
  • Serve with bagel chips, crackers or veggies like celery or carrot sticks.

Notes

NOTE:  You can use rotisserie chicken or boil down your own chicken. I put two boneless, skinless chicken breasts in a crockpot filled with water. After adding some salt and pepper, I boiled the chicken on high for 6 hours. Then after the chicken cooled a few hours, I shredded the chicken with two forks before refrigerating and using in this recipe.

    buffalo sauce? It’s hard to finish without enough ingredients, can I replace it with other ingredients?

      As the recipe states, it calls for 1/3 cup buffalo sauce.
