Peachy Berry Tossed Salad is one of the best salads we've ever eaten! This scrumptious Tossed Salad includes fresh peaches, blueberries, raspberries and Feta cheese. The homemade dressing uses healthy ingredients and also includes fresh peaches. This gluten free recipe is perfect for company, potlucks and family dinners. Everyone will rave over this delicious salad.
2mediumfresh peachespitted and sliced (they do not have to be peeled)
2/3cupavocado oil
1/2cuphoney
1/4cupcider vinegar
1/2cupsour creamor Greek yogurt or Icelandic yogurt
2tsp.poppy seeds
1/2tsp.sea salt
Instructions
TOSSED SALAD:
Remove stone from peaches and cut in slices.
Pour lemon juice into a bowl.
Gently swish the peach slices in lemon juice until both sides are well covered.
Transfer peach slices to a paper towel-lined plate.
Pat dry with paper towels.
Set aside.
Wash blueberries in a colander; pat dry between layers of paper towels.
Wash raspberries gently in a colander; pat dry between layers of paper towels.
In a large salad bowl, combine salad greens, fruit, cucumber, celery, onion and Feta cheese.
Cover and refrigerate until ready to serve.
CREAMY PEACH DRESSING:
In a blender, combine sliced, peeled peaches, avocado oil, honey, vinegar, sour cream or yogurt, poppy seeds and salt.
Puree about 30 seconds until ingredients are emulsified.
Serve with salad.
Refrigerate leftovers.
Notes
NOTE: I have also used this recipe using 16-ounces salad greens instead of 10-ounces. It works quite well with more salad greens or spring mix.NOTE: For the salad dressing, you can either peel the peaches or leave them unpeeled. It works well either way.NOTE: This is enough salad dressing for two salads.
