Fried Sweet Potatoes with Apples is another delicious sweet potato dish. This one is scrumptious. As with the other recipes, this one can be served as a side dish — especially for ham, pork, or chicken, or as a wonderful side dish for breakfast. Yes, Fried Sweet Potatoes with Apples is a great breakfast treat!
I love sweet potatoes and I like them in just about any combination — Sweet Potato Biscuits, Sweet Potato Cornbread, Sweet Potato and Black Bean Enchiladas, Sweet Potato Bacon Boats, Southwest Sweet Potato Chowder, Mexican Stuffed Sweet Potatoes, or even favorites like Spiced Sweet Potato Hummus, or my all-time favorite Sweet Potato Custard Pie!
As with my other Fried Sweet Potato recipes, this clean eating one is healthy, gluten free, lower calorie than some breakfast or side dishes, and vegan by using coconut oil instead of butter in the recipe. It has delicious savory flavors from the herbs and veggies with a touch of sweetness from the sweet potatoes and apples. In a word, this dish is superb!
For those of you who have never cooked in a cast iron skillet or Dutch oven before, I highly recommend the Lodge Cast Iron Cookbook. It is sensational and has a lot of great ideas on how to take care of your cast iron cookware. I have a couple of Lodge pieces, but mine are predominantly Wagner (an old brand from my mom’s era) and other pieces I have picked up at thrift shops.
Cast iron is really easy to restore and season, and once you learn how to use this cookware it’s hard to go back to anything else. I’ve been trying to eliminate all my aluminum cookware and learn to bake again in cast iron, glass, enameled cast iron, porcelain, and to use stainless steel (along with the rest) for stovetop cooking for health reasons. I’m convinced it’s a lot healthier to use, and the taste of cooking with cast iron is amazing.
If you’re looking for a special dish to make for breakfast sometime to go along with other breakfast casseroles, scones, or even quiche, than consider Fried Sweet Potatoes with Apples. This dish is bursting with wonderful flavors and is really quick, easy and economical to make. It’s a great alternative to the boring breakfast casseroles, baked oatmeal, or plain cereal breakfast ideas. Come on, be brave. Give this one a whirl!
When I first posted this recipe in May 2013, almost two years ago, I didn’t use my good Canon camera. Instead, I used an iPhone 4 which has it’s own difficulties with good picture taking. I love making this recipe so I finally decided to retake the pictures as well (February 2015), and offer some new photos that show the deliciousness of this recipe. This time instead of dicing the apples I cut them in rings for a little different texture. I also used 2 apples instead of merely one.
While I originally made this in cast iron skillets (my preferred method of cooking), for the purpose of pictures it is much easier to see when the skillets have a cream porcelain or enameled surface, so I took these pictures in a porcelain skillet. My personal preference these days is to cook in enameled cast iron. I love the surface and food cooks more evenly.
Fried Sweet Potatoes with Apples is a lovely side dish with ham, pork, or chicken.
It’s also great served for breakfast.
Fried Sweet Potatoes with Apples is healthy, clean eating, and so tasty!
Here’s what I did.
I used these ingredients. The clear jar with a blue lid contains coconut oil.
Melt coconut oil in a skillet at medium heat. Peel a large sweet potato. Cut into small dice. Add to skillet. Add sliced onion that has been separated into rings. If you’re serving small children this dish, you may want to dice the onion. Add diced red bell pepper and seasonings.
Cover with a lid and cook about 20 minutes. Every five minutes turn potatoes over with a spatula to prevent sticking or scorching.
Add apples. You can dice them, slice them or peel, core and slice them in rings. Cover and cook another 5-10 minutes until potatoes are fork tender. Be sure to turn potatoes over every five minutes to prevent sticking.
Here the Fried Sweet Potatoes with Apples are ready to serve.
Don’t these potatoes look yummy? You may think sage is only for turkey or stuffing, but it tasted wonderful in this dish with the other herbs. I can eat this sweet and savory dish for breakfast, lunch or dinner! Fried Sweet Potatoes is a healthy alternative to breakfast cereals and other refined/processed foods.
Here’s the recipe.
FRIED SWEET POTATOES WITH APPLES
(my own concoction)
- 1 large sweet potato, peeled and cut in small dice
- 3-5 slices of a medium-sized onion, sliced and separated into rings
- ¼ cup red bell pepper, diced
- 1 or 2 large Gala apples, peeled and diced, sliced or cored and cut in rings
- 1 tsp. chives
- ½ tsp. parsley
- ¼ tsp. sage
- ¼ tsp. marjoram
- ¼ tsp. thyme
- 1 tsp. kosher salt
- 1/3 tsp. pepper
- 2-3 tbsp. coconut oil or butter
- Heat cast iron skillet or other skillet over medium heat.
- Add coconut oil or butter and melt.
- Add sweet potatoes, onions, bell pepper, and seasonings.
- Cover and cook about 20 minutes, turning over potatoes every five minutes to prevent sticking or scorching.
- Add apple pieces and cook through, about 10-15 minutes more, until potatoes and apples are fork tender.
Fried Sweet Potatoes with Apples is quick, easy, and economical. It’s also a healthy dish for children, although I would dice up the onions for them.
I love all the different textures in this dish. The herbs give it a marvelous flavor.
