I can’t rave enough about this fantastic Loaded Bacon and Cheese Sweet Potato Bake! For those who like loaded baked potatoes with bacon, sour cream, cheese, and chives, this is a sweet potato version that you will love too. Instead of double-baking the potatoes, however, I mashed the sweet potatoes and added the filling ingredients. Then I baked the casserole again and added more cheese, bacon and sliced green onions on top. It was A-M-A-Z-I-N-G!!!!
I could have sat down in one sitting and eaten the whole thing! But I was a good girl and denied myself that pleasure because this Sweet Potato Bake does have a lot of bacon and cheese in it and, therefore, it’s not low in calories. It is high in taste, though. Oh, my it is so delicious.
I would have used a whole bag of green onions (half in the casserole and half on top) if I’d had them, but since I didn’t, I used three green onions on top and about 1/2 cup of diced red onions inside. For those of you who aren’t afraid of eating bacon this is pretty clean eating overall, too. I used bacon that had been cured with apple cider for a little more flavor.
I have to admit I love making sweet potatoes with a savory flare instead of always sweet. This recipe sure satisfies that longing. It’s a great casserole for holidays, but you can make this for your family anytime. I like it even for a main dish.

Loaded Bacon and Cheese Sweet Potato Bake is a great option for holiday baking since there are already so many sweet dishes like Cranberry sauce, pies, and sweet breads and rolls served on those occasions.
Here’s what I did.
Bake six large sweet potatoes. Peel sweet potatoes and place in large mixing bowl.
Mash potatoes with a potato masher. I like doing this rather than using an electric mixer because it leaves a little texture. Add butter.
Add salt, pepper and chives. My fresh chives had gone bad so I had to substitute dried. I would recommend you use a whole package of green onions placing half in the sweet potato mix and half on top for garnish. Because I didn’t have enough green onions I used about 1/2 cup diced red onion.
Add bacon pieces.
Stir sweet potato mixture together and place in a 9×13″ glass baking dish that has been sprayed with cooking spray.
Add bacon and green onions.
I recommend you bake it about 20-30 minutes at 350 until heated through.
Then layer the cheese, bacon, and green onions on top (and in that order) and bake an additional 5 minutes to melt the cheese. I baked it about 4 minutes more and the cheese had already melted so I removed the casserole from the oven.

This sweet potato casserole was so sumptuous. Sweet potatoes made this way are a real treat.
I used about 20 ounces of bacon and 8 ounces of cheese in this recipe, so it really is LOADED!
You can also garnish individual servings with sour cream and more chives if desired.

LOADED BACON AND CHEESE SWEET POTATO BAKE
(My own concoction inspired from my Sweet Potato Bacon Boats recipe)
- 6 large sweet potatoes, baked
- 8-oz. sharp cheddar cheese, divided
- 20-oz. bacon, crisp-fried (or microwaved) and broken into small pieces
- 6 tbsp. butter
- 1 tbsp. chives
- ½ cup red onion, diced
- 3 green onions, sliced
- 1 tsp. kosher salt
- ¼ tsp. pepper
- Bake sweet potatoes.
- Microwave bacon slices approximately 45 seconds to one minute per slice until cooked through. Break into small pieces.
- Peel sweet potatoes and place in a large mixing bowl.
- Mash down potatoes with potato masher.
- Add butter, 1 cup of cheddar cheese, chives, salt, pepper, red onions, and half the bacon.
- Stir to combine.
- Place in 9×13” baking dish that has been sprayed with cooking spray.
- Bake 20-30 minutes at 350° or until heated through.
- Cover casserole with remaining cheddar cheese, remaining bacon pieces, and green onions.
- Heat through 4-5 minutes or until cheese melts.
Loaded Bacon and Cheese Sweet Potato Bake is great served with ham, pork, or chicken.

This recipe makes about 8 servings. I ate it for a main dish since it had so much bacon it it!
