Creme de Menthe Cookie Dough Cheesecake Brownies
Creme de Menthe Cookie Dough Cheesecake Brownies are the best. No kidding. Those of you following my blog know I’m trying to clear out my pantry a little from the excess baking ingredients laying around since Christmas.

Thankfully, I found an incredibly wonderful way to use up more of the Andes Creme de Menthe baking chips the other day. If you like chocolate, if you like creme de menthe, and if you like cheesecake you will absolutely love this heavenly combination! Chocolate and mint fill the air as you inhale the wonderful essence of these spectacular brownies.
Again, I combined a couple of my favorite recipes to make this tasty brownie. I borrowed my friend Wanda Bollinger’s Chocolate Mint Chip Cookie recipe making it without the icing and substituting the creme de menthe baking chips for the mint chips in the recipe.
I used that for the crust layer and the crumble topping. The middle cheesecake layer and the overall idea of the layered bar came from my dear friend, Mimi Pownalls, Chocolate Chip Cookie Dough Cheesecake Bars recipe. Wow! This is an amazing cheesecake brownie. The Andes Creme de Menthe baking chips turn this into quite an impressive dessert.
I put about half of the dough into the crust layer and half on top. But if you want more of the pretty cheesecake layer to show you can increase the crust layer by using about 3/4 of the dough instead. The texture of this brownie is wonderful. For those of you who enjoy chocolate and cheesecake this brownie may become addictive. Beware!
This recipe is really fairly easy to prepare. It takes about 10 minutes to mix the cookie dough, 5 minutes to mix the cream cheese filling, and 5 minutes to assemble the dessert and get it into the oven to bake. It takes another 35-40 minutes to bake, and voila! You have a magnificent dessert on your hands, just in time for Valentine’s Day or other special occasions.
Creme de Menthe baking chips are usually pretty easy to find at the grocery store so you can make this terrific dessert any time of the year. This is a great recipe for birthday parties, bridal showers, or just because you love chocolate! If you’re looking for another great chocolate recipe with mint flavor and a cheesecake layer, consider this option soon. You and your family won’t be able to get enough of these fabulous brownies.
When I initially posted this recipe in February 2013 I was trying to use up leftover baking goods. At the time I was still using an iPhone for a camera so my pictures were not as clear as I would have had with a better camera lens.
As a result, I’ve been remaking all of my first year blog recipes so I can offer better pictures for each one. I recently remade this recipe (February 2016) for John to give away to friends. They turned out just as scrumptious as ever!

These brownies really are awesome. Once you try a bite you will be hard-pressed to stop. Try to stop at just one–I dare you!
These luscious Creme de Menthe Cookie Dough Cheesecake Brownies are filled with Andes Creme de Menthe baking chips!
Here’s what I did.
I used these ingredients for the cookie dough layer. (I actually used two bags of baking chips).
Soften butter and place in large mixing bowl. Add sugar, brown sugar, baking soda, salt, vanilla and eggs.
Mix all ingredients together with an electric mixer.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add Creme de Menthe baking chips and cocoa.
Stir ingredients together with a wooden spoon. Using an electric mixer at this point will toughen the cookies due to overmixing the dough.
Spray an 11″x17″ jelly-roll pan with cooking spray. Spread half to 3/4 of the dough into the pan. Sprinkle with a tablespoon or two of flour, if necessary, to keep the dough from sticking to your spoon or hands, and pat the mixture into the prepared pan.
I used these ingredients to make the cheesecake filling.
In a separate bowl soften cream cheese. Add eggs, vanilla and sugar. Mix with an electric mixer until no lumps remain.
Spread cream cheese mixture over top of the brownie dough.
Sprinkle remaining cookie dough over top of the cream cheese layer. Sprinkle remaining Creme de Menthe baking chips on top.
Bake at 350 for about 35-40 minutes or until toothpick inserted in center comes out clean.

CRÈME DE MENTHE COOKIE DOUGH CHEESECAKE BROWNIES
(Recipe inspired from Wanda Bollinger’s Chocolate Mint Chip Cookies, and Mimi Pownall’s Chocolate Chip Cookie Dough Cheesecake Bars)
Creme de Menthe Cookie Dough Cheesecake Brownies
Equipment
- 1 11x17" jelly roll pan
- 1 electric mixer
- 2 mixing bowls
- 2 wooden spoons
- measuring cups
- measuring spoons
- 1 spatula
Ingredients
CREME DE MENTHE BROWNIES:
- 1 1/2 cups unsalted butter softened
- 1 cup light brown sugar packed
- 1 1/2 cups granulated sugar
- 3 large eggs
- 1 tsp. vanilla extract
- 1 tsp. baking soda
- 1/2 tsp. sea salt
- 1 cup cocoa
- 4 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
- 20 oz. pkg. Andes Crème de Menthe Baking Chips (two 10-ounce packages)
CHEESECAKE FILLING:
- 16 oz. pkgs. cream cheese softened (2 blocks)
- 2 large eggs
- 2 tsp. vanilla extract
- 1 cup granulated sugar
Instructions

- Mix butter, sugars, eggs, vanilla, baking soda and salt in a large mixing bowl with an electric mixer until smooth.
- Add flour, cocoa and 1 1/2 bags baking chips.

- Cut into 48 bars.
