It’s layered on a base of rich, chocolate Red Velvet and topped with luscious chocolate chips or red chocolate chips. A dusting with confectioners’ sugar finishes it off.

I love Ooey Gooey Butter Cake and I decided I wanted to try my hand at making a Red Velvet variety. I used my basic Ooey Gooey Butter Cake recipe and switched out the regular yellow cake mix for a Red Velvet cake mix instead. I left the cream cheese filling the same except to color it with red food coloring. Then I added chocolate chips on top. Voila! Extra rich, chocolatey Red Velvet Gooey Butter Cake Bars. Oh, my!

When I first posted this recipe in January of 2013, I was still using a simple iPhone for my camera. The pictures were too busy, grainy, and it was really difficult to see the bars clearly.
I recently remade this recipe for some friends who came down with the flu, so I also shot some new pictures which more adequately depict the beauty and elegance of Red Velvet Gooey Butter Cake Bars. I noticed this time that the cream cheese layer was not as red as when I made it the first time, but the recipe turned out with the same great taste.

Red Velvet Gooey Butter Cake Bars are so festive, elegant, and beautiful! Not only is there a chocolate layer, but then there’s a cheesecake layer covered with chocolate chips! Whoa, Betsy!
Here’s what I did.

These are the ingredients I used. Liquid red food coloring works better than the gel I used.

For the crust: Place Red Velvet cake mix in a mixing bowl. Add an egg and melted butter.

Stir ingredients together with a fork, mashing any lumps from the cake mix until the dough is thoroughly mixed.

Spray a 9×13″ baking dish with cooking spray. Spread cake mix mixture into bottom of sprayed pan.

To make cheesecake filling: soften cream cheese. Add eggs, powdered sugar, food coloring and vanilla. (I used gel coloring but liquid food coloring actually works better and develops a darker red color).

Mix with an electric mixer until well combined. If you want a redder color, add more food coloring.

Spread cream cheese mixture over top of crust layer.

Sprinkle chocolate chips over top. You can also use red or red and green chocolate chips, as desired.

Bake at 350 for about 1 hour to 1 hour 15 minutes, until a toothpick inserted in center comes out clean.

Cool brownies completely. Sprinkle heavily with powdered sugar. When dish is completely cool, cut into bars.

Equipment
- 1 9x13" glass baking dish
- 2 mixing bowls
- 1 electric mixer
- 2 wooden spoons
- measuring cups
- measuring spoons
- 1 spatula
Ingredients
- 1 box Red Velvet cake mix
- 1 stick unsalted butter melted
- 1 large egg
- 8 oz. pkg. cream cheese softened
- 2 large eggs
- 3 cups powdered sugar
- 1 tbsp. vanilla extract
- 1 oz. red food coloring or more, if a stronger red color is desired
- 1/2 cup chocolate chips or red chocolate chips
- 1/3 cup powdered sugar for garnish
Instructions
- Mix cake mix, butter, and egg together.
- Press into a greased 9x13” baking pan or dish (or spray with cooking spray).
- In another mixing bowl, mix cream cheese, 2 eggs, powdered sugar, vanilla, and food coloring with an electric mixer until well mixed.
- Spread over top of crust layer.
- Sprinkle chocolate chips over top.
- Bake at 350° for 60-75 minutes or until mixture tests done with a toothpick.
- Remove from oven.
- Cool completely.
- Sprinkle heavily with powdered sugar.
- Cut into bars when cool.
