Parmesan Crusted Chicken
Parmesan Crusted Chicken is simply amazing. I just LOVE this healthy, low calorie, main dish chicken recipe. It has wonderful savory flavors from all the spices and herbs, a lovely sauce made with Greek yogurt and Parmesan cheese, and then crunchy bread crumbs are spread over the top that provide a nice texture–especially since my bread crumbs were homemade and didn’t have the fine texture of most store-bought versions. Substituting Panko bread crumbs with a little additional parsley and garlic or Italian seasoning will accomplish the same crunch for you when you make this dish.

I was trying to make a healthier version of this classic recipe so, instead of using mayonnaise, I again substituted Greek yogurt. This time I bumped up the flavors considerably by adding several different herbs and seasonings as the author suggested since Greek yogurt is blander than either mayonnaise or Miracle Whip.
And instead of using regular bread crumbs which are filled with high fructose corn syrup, I used a batch of my Homemade Bread Crumbs which are preservative, MSG, and high fructose corn syrup-free since I made them from homemade bread.
This recipe is a take-off on the Melt-In-Your-Mouth Chicken Breasts recipe that has gone viral over the Internet, and another version where I made Melt-In-Your-Mouth Turkey Tenderloins–both recipes were quite tasty. Those versions were superb, but I actually think I like this version better for two reasons–and these are just personal preference issues.
First, this recipe has a significant increase in flavor with the addition of many more spices and herbs. Second, I really liked having the crunchy (not fine) bread crumbs on top. That’s why I recommend if you want your recipe to turn out crunchy you will need to sprinkle Panko bread crumbs over top rather than regular Italian-style bread crumbs.
If you’re looking for a really tasty chicken recipe that has a nice Parmesan cheese and bread crumb crunch coating to it, then I highly recommend this simple, easy main dish. It only uses a handful of ingredients so you can whip this up in about 5 minutes. No kidding!
Give it a try the next time you make chicken for dinner. This recipe is a keeper! And don’t be afraid to bump up the seasonings or add more of your favorites to increase the taste. And, if you’re on the finicky side when it comes to using Greek Yogurt in recipes then, by all means, cut back the amount a little to your tastes. Whichever way you make this, it certainly makes a yummy chicken dish.

Parmesan Crusted Chicken is so easy to make up for dinner.
We loved the delicious crunch that my Homemade Bread Crumbs provided this chicken. The best way to replicate the crunch is to substitute Panko bread crumbs instead.
I had this recipe ready to bake in about 5 minutes. Add some seasoned veggies and a side dish of fruit and you have a very healthy, low calorie meal.
Here’s what I did.
Grate up parmesan cheese with a fine blade.
Add Greek yogurt. While I used Greek yogurt, mayo is probably better for taste and texture.
These are the seasonings I chose to use in this recipe to increase the flavor of the chicken since I wanted to use Greek yogurt instead of mayonnaise. Add thyme. Thyme is WONDERFUL in chicken dishes. Add marjoram. This is another one of those underused herbs but it really provides fabulous taste to a meat, soup, or veggie recipe. Add garlic powder, lemon pepper, parsley, kosher or sea salt.
I decided to add paprika to amp up the flavors a little more.
Stir to combine. This amount is plenty for four to six chicken breasts.
Spray a baking dish with cooking spray. Place chicken breasts in dish.
Coat chicken pieces with yogurt-parmesan cheese mixture. (I recommend applying only a thin coating rather than the amount in the picture).
Scoot each piece of chicken away from each other in the pan so the pieces are not crowded or touching each other while baking.
Sprinkle the top of the chicken with Homemade Bread Crumbs or Panko bread crumbs.
Bake at 425 about 30 minutes or until juices run clear when pricked with a fork.
Serve Parmesan Crusted Chicken with your favorite side salad or potato dish! We had a very simple meal of Parmesan Crusted Chicken along with garlicky lima beans and watermelon. Simple, delicious, satisfying, healthy, and low calorie.

- 1 9x13" glass baking dish
- 1 small mixing bowl
- 1 whisk

Ingredients
- 2 chicken breasts boneless, skinless
- 1/2 cup plain Icelandic yogurt or plain Greek yogurt (or use sour cream or mayo)
- 1/3 cup freshly grated Parmesan cheese
- 1/2 tsp. dried thyme
- 1 tsp. dried marjoram
- 1 tsp. garlic powder
- 1 tsp. lemon pepper
- 1 tbsp. dried parsley
- 1/2 tsp. sea salt or kosher salt
- 3/4 tsp. paprika
- 1/3 cup Italian bread crumbs or Homemade Bread Crumbs, enough to cover chicken well
Instructions
- Mix Greek yogurt, cheese and seasonings together in small mixing bowl.
- Spray a glass baking dish with olive oil cooking spray.
- Place chicken breasts on the bottom of the dish.
- Spread cheese mixture over top of the chicken breasts.
- Sprinkle bread crumbs evenly over top.
- Bake at 425° for about 30-40 minutes until juices run clear when meat is pricked with a fork.
