Coconut Macadamia Blondies

Coconut Macadamia Blondies are healthier, gluten free brownies that you’ll love. These blondies use coconut sugar instead of regular sugar, and gluten free flour instead of regular flour. They also include coconut and macadamia nuts providing lots of crunchy texture in every bite. This simple recipe is a sweet tooth delight, especially if you’re a coconut lover.

I had a little coconut sugar leftover after making my Gluten Free Fudgy Almond Brownies back in September. I decided to try my hand at this recipe and they turned out so ooey, gooey and delicious. I love gooey brownie recipes and these are wonderful. When I made a batch of these brownies, they were gobbled up very quickly.
If you enjoy coconut desserts, you’ll love Coconut Macadamia Blondies. I recommend them for holiday baking, too. Especially if you have friends or family members that enjoy sweets but are trying to stay away from regular sugar or flour. We loved these goodies and hope you will too!

This is a fabulous gluten free dessert.

Here’s what I did.
I used these ingredients. I don’t recommend Pamela’s gluten free products for baking but it was the only gluten free product available at the time. I recommend Cup4Cup.
Soften butter. Place in a mixing bowl with eggs, coconut sugar, vanilla, aluminum free baking powder and pink Himalayan sea salt.
Mix with an electric mixer until smooth and creamy.
Add gluten free flour, macadamia nuts and coconut.
Stir with a wooden spoon to combine.
Grease an 8×12″ glass baking dish. Pour batter into baking dish. Top with additional coconut and macadamia nuts.
Bake at 350 for 25-30 minutes or until a toothpick inserted in center comes out clean.
Coconut Macadamia Blondies are crunchy and delicious.
If you’re trying to stay away from gluten or cane sugar, these blondies are a great alternative.

COCONUT MACADAMIA BLONDIES
(My own concoction)
Coconut Macadamia Blondies
Equipment
- 1 8x12" glass baking dish
- 1 large mixing bowl
- 1 wooden spoon
- 1 electric mixer
- measuring cups
- measuring spoons
- 1 spatula
Ingredients
- 1/2 cup unsalted butter softened
- 1 1/2 cups coconut sugar (I only used one cup because that's all I had left)
- 2 large eggs
- 2 tsp. pure vanilla extract
- 1 1/2 cups gluten free flour such as Cup4Cup or Better Batter
- 1 tsp. baking powder
- 1/2 tsp. salt
- 2 cups coconut divided use
- 4 oz. macadamia nuts coarsely chopped, divided use
Instructions
- In a mixing bowl, cream butter, sugar, eggs, vanilla, baking powder and salt; mix well with an electric mixer.
- Add flour, 1 cup coconut and ½ cup macadamia nuts.
- Spread into greased 8x12” glass baking dish.
- Sprinkle with remaining coconut and chopped macadamia nuts.
- Bake at 350° for 25-30 minutes or until golden brown.
- Cool and cut into squares.

Question… I see that most of your Recipes are Gluten Free. I live in a very small town with little Grocery Stores. So if I happen not to be able to find some of the ingredients in Gluten Free can I use the Regular Ingredients. I’ve got to ask because I keep your blog up on my Desktop Computer 24/7…. that’s how much I love your Recipes. Also, do you have any Christmas Recipe Collection’s? And do you have a Cookbook yet?

What a sweet comment, Sandra. Most of my baking recipes (like muffins that use gluten free flour), you can also substitute regular unbleached flour. However, in most of those recipes, I’ve actually had to increase the GF flour because the recipe needs more to get the same consistency. If you’d like to check with me before you’re thinking of making something, I can tell you if it’s based on another recipe and you may need to decrease the flour somewhat. What I usually do, Sandra, is locate stores that actually sell gluten free products, then I keep them in the freezer (I keep almost all of my grains in the freezer to prevent spoilage). That will insure that you can use the product safely for months. I stock up on stuff like that and GF bread when I find it and then pull it out when I need it.
Any of the casseroles, soups or other recipes where I’m using GF flour as a thickener, you can do exactly the same with regular flour–no changes are needed. I do have a lot of Christmas cookie collections on my blog. Try searching for Christmas cookies or Christmas Cookie Extravaganza. I have hundreds of cookies and brownies to choose from. If you’re looking for anything in particular, just email me or comment on another cookie and ask, and I can tell you if I have a recipe for those ingredients.
