Rice Krispie Treats with Candy Melts Icing

Oh my. I’ve got a treat that will knock your socks off! Rice Krispie Treats with Candy Melts Icing. Yum. These lovely marshmallow-flavored goodies are made even better with the icing on top. The Rice Krispie Treats themselves only use three ingredients. They are soooo, soooo easy to make. The candy melts are melted with a little oil. Then the cookies are spread with the icing and drizzled with another glaze. Or, in our case, we cut the Rice Krispie Treats into the shape of “ones.” Then we dipped them halfway into the pink candy melts. After that we drizzled white candy melts over top of the pink icing.

Okay, time for confession. I have not had a Rice Krispie treat in four decades. I tried them once when John’s grandma made them for dinner one night. I’ve never liked them and I’ve never made them before now. But there was a young college girl in our church who wanted help making some for her niece’s first birthday. So we were off to the races in my kitchen. 🙂
Because the first batch of treats were so thick we had to cut them in half laterally first. Then we used a template and cut them in the shape of “one’s.” After that we dipped the bottom half of the “one’s” in the melted pink candy melts. Finally, we drizzled melted white candy melts over the pink glaze.
It was a process and took a few hours because of the extra work involved. She gave me several recipes and we worked from three different ones to get the effect we wanted. We also tried macaroons but they didn’t turn out well. So we made up a batch of my Best Sugar Cookies. Instead of icing them, we rolled half of them in colored sugar. We colored the remainder with red food coloring until we got it a nice pink color. Everyone raved over the cookies.
It was a nice experience for our college friend because she got the experience of hanging out in the kitchen all day learning lots of new tricks. It was a good experience for her family because they got to eat lots and lots of cookies. I’m still hearing how much they enjoyed them even though it’s months later.
There was a whole pan of “scraps” leftover. So I decided to soften them with a little more butter and spread them into a 9×13″ baking dish. I spread pink icing over top and drizzled them with the white glaze. Those were much easier and less time-consuming. Truthfully, I wondered how they would turn out the second time around. They were fantastic.
I served them for dinner at our Friday night care group in late February. Everyone loved them. And I ate my first Rice Krispie Treat in four decades. 🙂 I have to admit I really liked them with the icing. We used Candy Melts because we were following directions from another recipe. But you can probably use other icings as well.
For those who desire a gluten free dessert, this one is gluten free. Give Rice Krispie Treats with Candy Melts Icing a try the next time you need a dessert for a potluck. They are so easy and delicious that you’ll keep going back for more.

These treats are perfect for potlucks, tailgating parties or even birthdays.
We made Rice Krispie Treats with Candy Melts Icing for a one-year birthday party.
Here’s what I did.
I used these ingredients for the Rice Krispie Treats.
Melt butter in a large Dutch oven. Add marshmallows.
Stir constantly until marshmallows melt. Remove from heat.
Add Rice Krispies cereal.
Stir ingredients with a wooden spoon and combine very well.
Spread into a 9×13″ glass baking dish. You can also put these in a cookie sheet. Pat down very firmly so ingredients adhere together.
Allow treats to cool completely before adding glaze.
I used these ingredients, plus oil and white candy melts for the icing. We ended up not using the sprinkles.
Melt candy melts over low to medium heat. Do not add water! Add oil if necessary to get icing to a smooth, spreadable consistency. (I had to use a couple of tablespoons).
Spread melted candy melts over top of Rice Krispie Treats.
Melt white candy melts. Add oil as necessary to get to a consistency where you can drizzle the icing.
Drizzle melted white candy melts over top of the melted pink candy melts. Allow to set completely before cutting into bars.
We cut one batch of the treats into equal sizes. You can see how deep these were. So we cut them in half laterally, so each one made two.
We cut out a template from card stock and placed it over top of each block.
Here we started cutting the Rice Krispie Treats into the shape of “One’s”.
Here’s one of them.
Once the numbers are all cut out, place numbers on a cookie sheet.
Dip the bottom half of the number into melted candy melts. Allow icing to dry completely.
Drizzle the melted white candy melts over top of the melted pink candy melts.
Here they’re ready for the birthday party. 🙂
These were the scraps that were left over. I reheated them adding additional butter. Then I pressed them into the pan and iced them (like noted above).
These festive and beautiful treats were very warmly received at the girl’s first birthday party.

- 1 Dutch oven

Ingredients
RICE KRISPIE TREATS:
- 6 tbsp. unsalted butter
- 6 cups miniature marshmallows
- 6 cups Rice Krispies cereal
CANDY MELTS ICING:
- 1 or 2 16-oz. bags pink candy melts
- 1 16-oz. bag white candy melts
- 2 tbsp. canola oil as needed to make mixture smooth and spreadable
- sprinkles if desired
Instructions
RICE KRISPIE TREATS:
- Melt butter in large Dutch oven over medium heat.
- Add marshmallows.
- Stir continually until the marshmallows are completely melted.
- Turn off heat.
- Add the Rice Krispie Cereal and stir with a wooden spoon until cereal is completely coated with melted marshmallow mixture.
- Spoon ingredients into a 9x13” glass baking dish.
- Press ingredients down very firmly in baking dish.
- Cool completely before adding icing.
CANDY MELTS ICING:
- Melt candy melts over low heat, stirring frequently.
- Add a teaspoon of oil at a time and stir just enough oil into melts to make them soft enough for dipping.
- Either spread icing over top of 9x13” baking dish or dip shaped Rice Krispie Treats into melted candy melts as desired.
- Drizzle icing of a different color over top of glaze.
- Allow icing to set completely before cutting into bars.

Claudia. You may want to check out my Potato Chip Cookies (NOT Mimi’s Potato Chip Cookies). Substitute coconut oil or avocado oil for the butter in the recipe. I’ll bet you find them amazing.
