Creamy Scrambled Eggs with Chives

Creamy Scrambled Eggs with Chives is heavenly. Eggs are scrambled with cream cheese and chives and served over toast. This makes for one delicious breakfast. It’s a fantastic breakfast dish for weekend, company or holiday breakfasts. Add some fresh fruit and bacon or sausage and you have a nice country style breakfast.

I found this delightful recipe when I was looking through my Gooseberry Patch cookbooks. It really intrigued me. I’ve never made scrambled eggs with cream cheese before. But I thought I’d give it a try. I ran out of fresh chives and had to supplement with dried chives. I really didn’t feel like it hurt the recipe in any way.
The first weekend in October, our church hosted a weekend for the youth in host homes. It was a time of discipleship, Bible study, prayer and fun activities. I signed up to bring food to a neighbor down the street who was hosting middle school girls. I needed a breakfast entree for Saturday morning so I tried out the Creamy Scrambled Eggs and Chives on myself first. I loved this recipe. The eggs really were creamy and the flavors were scrumptious.
On the Saturday of the event, I asked my husband to make the recipe. He’s better at making breakfast than I am. Plus, he doesn’t mind getting up early since he’s used to that schedule. I told him exactly what to do. And he followed my directions and suggestions to a T. The main thing I changed in the recipe was to add the cream cheese at the very beginning so it has a chance to really melt down into the eggs.
The kids who got the entree loved it. The host family raved over it. They are on Keto diets anyway, so this recipe was exactly what they were looking for (minus the toast). The recipe contributor to Gooseberry Patch suggested serving this recipe over toast. I liked that idea and thought it worked out really well that way. That’s how I would recommend eating Creamy Scrambled Eggs and Chives. If you want to keep the recipe gluten free, then you’ll need to serve it over gluten free toast.
Creamy Scrambled Eggs with Chives is really one of those breakfast entrees you should add to your menu often. It’s utterly delicious. I think you can eat this breakfast entree with regularity and not get tired of it. Try it out on your family next weekend. Serve it over toast and see if you don’t have a winner. 🙂

We found every bite so mouthwatering.
Here’s what I did.
I used these ingredients, plus water. I didn’t have enough fresh chives so I used dried chives as well.
Scramble eggs in a mixing bowl.
Add salt, pepper, baking soda, chives and water.
Stir ingredients to combine.
Heat skillet over medium heat. Add butter and melt.
Add egg mixture. I would add cream cheese NOW. Not later as the pictures show. It melts easier that way. That’s what I did the second time we made this recipe.
As eggs begin to set, push them gently to the center of the skillet with a spatula.
Here you can see the slivers of cream cheese added. I prefer adding them earlier so they melt sufficiently.
Continue cooking for one minute, stirring occasionally.
Eggs should be set but still moist.
Serve eggs over top of Ezekiel Bread toast or your favorite toast.
Every forkful was amazing. I loved the creamy texture of the eggs.

CREAMY SCRAMBLED EGGS WITH CHIVES
(Recipe adapted from Gooseberry Patch, Comfort Foods)
Creamy Scrambled Eggs with Chives
Equipment
- 1 toaster
- 1 whisk
- 1 mixing bowl
- 1 skillet
- 1 spatula
- 1 table knife to cube cream cheese
- measuring cups
- measuring spoons
Ingredients
- 8 large eggs
- 2 tbsp. fresh chives chopped
- 1/2 tsp. sea salt
- 1/4 tsp. ground black pepper
- pinch baking powder
- 1/4 cup water
- 2 tbsp. unsalted butter
- 4 oz. cream cheese diced
- 4 slices Ezekiel's sprouted multi-grain bread toasted
Instructions
- Whisk eggs in a large mixing bowl with chives, salt, pepper, baking powder and water.
- Set aside.
- Melt butter in a skillet over low to medium heat.
- Add egg mixture.
- As eggs begin to set, push them gently toward the center of the skillet with a spatula.
- (See my note below about adding the cream cheese just before this point, rather than later in the cooking process).
- This will allow the uncooked egg to move toward the sides of the skillet and cook.
- Once eggs are partially set, add the cream cheese.
- Continue cooking for one minute, stirring occasionally.
- Eggs should be set but still moist.
- Spoon eggs evenly over pieces of Ezekiel toast.

This is the second recipe of yours I’ve tried (the other being the lemon crumb pie, yum!) and it’s very good! I love your detailed recipes and tips. I added the cream cheese earlier like you suggested and it melted perfectly into the eggs so I didn’t get a big bite of a glob of cream cheese. Thank you!
