Pineapple Explosion
If you enjoy pineapple, this Pineapple Explosion Cake will knock your socks off. Truly. The cake batter uses only 3 ingredients including a pineapple cake mix and pineapple pie filling. But you get the double whammy with the cream cheese icing. It includes pineapple extract and pineapple tidbits on top (and it’s only 6 ingredients). Yes, you get pineapple 4 delicious ways in this explosion of flavor!

I made a meal the last week of October for a gal in our neighborhood who underwent hip replacement surgery. She had the other hip worked on a couple of years ago, and this one in October. I actually ended up halving the meal and sharing the other half with some other neighbors of ours that used to live across the street. She had helped me tremendously with our garage sale, so I thought I would bless them with a meal also.
I made up Easy Chicken and Yellow Rice, Green Beans, Pear Salad Halves, Marinated Veggie Salad, some homemade bread and this delectable dessert. I think this was the second or third dessert I’ve given to my neighbors with pineapple as the main ingredient. They loved this recipe enough to want to make it for family when visiting them in early November. 🙂

This recipe makes a large sheet cake – up to 48 servings. So it’s the perfect dessert to serve a crowd.
Here’s what I did.
I used these ingredients for the cake.
Pour pineapple cake mix into a mixing bowl. Add eggs.
Stir ingredients to combine.
Add a can of pineapple pie filling.
Stir again to combine.
Spread cake batter into a greased 12×17″ cookie sheet.
Bake 20-30 minutes or until a toothpick inserted in center comes out clean. Cool cake completely before adding icing.
I used these ingredients for the icing.
Soften cream cheese and butter.
Mix with an electric mixer until smooth and creamy.
Add pineapple extract and vanilla extract.
Mix with an electric mixer again until smooth. Add powdered sugar, one cup at a time, mixing after each addition.
Mix until creamy.
Spread cream cheese icing over top of cooled cake.
Drain pineapple and press dry with paper towels. Sprinkle pineapple over top of cream cheese icing. Refrigerate cake for a couple of hours for easier cutting. Refrigerate leftovers.

- 1 11x17" jelly roll pan
- 1 large mixing bowl
- 1 wooden spoon
- 1 small mixing bowl
- 1 electric mixer
- measuring cups
- measuring spoons
- 1 spatula
Ingredients
CAKE:
- 15.25 oz. box Duncan Hines Perfectly Moist Pineapple Supreme Cake Mix
- 22 oz. can Lucky Leaf Pineapple Pie filling
- 4 large eggs
CREAM CHEESE ICING:
- 8 oz. pkg. cream cheese softened
- 1 tbsp. vanilla extract
- 1 tsp. pineapple extract
- 1 cup unsalted butter softened (2 sticks)
- 4 cups powdered sugar
- 8 oz. can pineapple tidbits drained really well and patted dry
Instructions
CAKE:
- Mix together cake mix and eggs.
- Fold in the pie filling.
- Spread into a greased 11x17” cookie sheet.
- Bake at 350 degrees for 20-28 minutes, until a toothpick inserted in center comes out clean.
- Cool completely before adding icing.
CREAM CHEESE ICING:
- In a small bowl, beat cream cheese, vanilla extract, pineapple extract and butter.
- Add powdered sugar a cup at a time, beating after each addition.
- Beat until smooth.
- Spread over top of cooled cake.
- Drain pineapple really well and pat dry gently with paper towels.
- Spread pineapple over top of icing.
- Refrigerate cake before serving.
