Cherry Pineapple Date Cookies
Cherry Pineapple Date Cookies just rock! These Oatmeal Cookies include candied cherries and pineapple, along with dates, coconut, pecans and of course, oatmeal. On top of that, I used almond extract instead of the traditional vanilla and the almond flavoring amped up the flavor even more. These cookies were fantastic.

I dug out an old recipe that I’ve had a lot of success with and decided to add the Cherry Pineapple Mix that was send to me from Paradise Fruit. I made about five batches of this recipe when I was making it, so I thought it would take FOREVER to stir it. But I actually had that huge bowl all stirred and ready to go in about five minutes.
When you think that this cookie recipe has six different flavors going into the cookie, not including the almond extract, you might tend to think it’s just too much. I assure you, it was not. These cookies were wonderful. I filled a large cookie scoop about 7/8 full and packed the dough into the scoop. I didn’t want the cookies any larger then that because they were going to be bagged up for our Christmas cookie giveaway. The cookies need to fit in our 4×5″ bags. A full scoop or an enlarged scoop would expand too much so that the cookies wouldn’t fit well.
These cookies turned out the perfect size and just had terrific body, texture and taste. Plus, they’re festive and beautiful for any kind of holiday baking or gift-giving. The fruit and coconut sweeten the cookie. The oatmeal and pecans add crunch and texture. Oatmeal Cookies are great this time of year, no matter would you include in them. If you enjoy cherries, pineapple and dates, this is a marvelous way to enjoy all three food groups (haha!). Merry Christmas.
Cherry Pineapple Date Cookies are fantastic for holiday baking and gift-giving.
These cookies are chocked full of fruit, coconut and pecans.
They’re festive and beautiful for holiday parties.
Serve them for tailgating or office parties too.
Here’s what I did.
I used these ingredients.
Chop candied cherries and pineapple; set aside.
If your dates are not previously chopped, chop and set aside; do the same with the pecans if they are not previously chopped.
Soften butter and put in mixing bowl. (I left the butter out on the counter over night).
Add granulated sugar, brown sugar, eggs, baking powder, baking soda, salt and almond extract. (Remember I was making 5 batches at once so ingredients shown are more than for a single recipe).
Beat mixture with electric mixer until completely smooth.
Add unbleached all-purpose flour. Bleached flour toughens baked goods. Add oatmeal, chopped dates and chopped cherries and pineapple.
Add chopped pecans.
Stir with a heavy metal spoon until thoroughly mixed.
Grease cookie sheets. Scoop out and pack dough into cookie scoop about 7/8 full. Do not overfill.
Place scoops of dough about 2-3 inches apart on greased cookie sheets.
Bake at 350 degrees for about 17-22 minutes. Rotate cookie sheets on oven racks after nine minutes of baking time. (My cookies took 18 minutes to bake completely).
Serve with other assorted holiday treats!

CHERRY PINEAPPLE DATE COOKIES
(Recipe inspired from my Coconut Date Cookies)
Cherry Pineapple Date Cookies
Equipment
- 2 18×26" cookie sheet pans
- 1 large cookie scoop
- 1 sharp knife to cut fruit (if not previously chopped)
- 1 nut chopper to chop nuts if not previously chopped
- 1 large mixing bowl
- 1 electric mixer
- 1 heavy metal spoon
- measuring cups
- measuring spoons
- 1 spatula
- 2 wire cooling racks
Ingredients
- 2 cups unbleached flour (bleached flour toughens baked goods)
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. sea salt
- 1 cup salted butter softened (2 sticks)
- 1 cup granulated sugar
- 1 cup light brown sugar packed
- 2 large eggs
- 1 tsp. almond extract
- 2 cups old-fashioned oatmeal uncooked
- 1 cup sweetened coconut
- 1 cup chopped pecans (measure after chopping)
- 8 oz. pkg. chopped dates
- 8 oz. pkg. Paradise candied cherry pineapple mix
Instructions
- Preheat oven to 350°F.
- Grease two large cookie sheets.
- Set aside.
- In a large mixing bowl, mix together the butter, brown sugar, granulated sugar, eggs, almond extract, baking powder, baking soda and salt.
- Blend well with an electric mixer until smooth.
- Stir in flour, coconut, dates, oatmeal, candied cherry & pineapple mix, and pecans until thoroughly mixed.
- Press cookie dough into a ¼ cup cookie scoop using a scant measure.
- Press firmly or the dough will crumble when you drop the scoopfuls of cookie dough onto a cookie sheet.
- Space cookies 2 to 3 inches apart on greased baking sheets.
- Bake for 17 to 22 minutes or until lightly browned and just set.
- Rotate cookie sheets on oven racks after nine minutes of baking time.
- Transfer to wire racks to cool completely.
