Peanut Butter Brownie Cups
Peanut Butter Brownies are so good, but these Peanut Butter Brownie Cups take peanut butter and chocolate to a whole new level! This recipe includes a delicious brownie batter with both chocolate chips and peanut butter chips. Then peanut butter chips are added on top for another burst of flavor.

I brought a meal to some neighbors back in June after he got home from the hospital. That meal included Hamburgers, Partytime Beans, Nutty Apple Salad, homemade bread and these Peanut Butter Brownie Cups. I also added some Luscious Lemon Muffins for breakfast. They were thrilled with the meal. And if you’ve ever brought someone home from the hospital, you know the last thing you want to do is to prepare a meal. So this meal hit the spot for them.
Peanut Butter Brownie Cups are made in muffin tins – a really novel idea, but they turn out so delightfully. These little brownies are terrific for tailgating parties, potlucks, backyard barbecues or even birthday parties. If you enjoy chocolate and peanut butter together, this is the perfect dessert for you. 🙂

Every bite is mouthwatering and irresistible!
Here’s what I did.
I used these ingredients..
Melt butter, 1 cup chocolate chips and cocoa over low heat in a medium-sized saucepan.
Stir until smooth.
Add granulated sugar.
Stir to combine.
Add eggs, one at a time, whisking after each addition.
Whisk eggs into mixture.
Add salt and vanilla.
Whisk again to incorporate ingredients.
Add unbleached flour (bleached flour toughens baked goods).
Stir again to incorporate flour.
Add remaining chocolate chips and half of the peanut butter chips.
Stir to combine.
Spoon mixture into muffin tins that have been sprayed with cooking spray. Fill muffin tins about 3/4 to 7/8 full.
If desired, sprinkle extra peanut butter chips on top.
Bake at 350 degrees for 20-25 minutes.

PEANUT BUTTER BROWNIE CUPS
(My own concoction)
Peanut Butter Brownie Cups
Equipment
- 1-2 regular size muffin tins
- 1 medium saucepan
- 1 whisk
- 1 wooden spoon
- measuring cups
- measuring spoons
Ingredients
- 1/2 cup salted butter (1 stick) or you can use unsalted butter
- 1 1/2 cups granulated sugar
- 3 large eggs
- 1/3 cup unsweetened cocoa powder
- 1 tsp. pure vanilla extract
- 1/2 tsp. sea salt
- 1 cup unbleached all-purpose flour (bleached flour toughens baked goods)
- 2 cups semi-sweet chocolate chips divided use (12-ounces)
- 2 cups peanut butter chips divided use (12-ounces)
Instructions
- Preheat oven to 350°.
- Spray 14 regular-sized muffin cups with cooking spray.
- Set aside.
- In a small saucepan, melt butter, 1 cup semi-sweet chocolate chips and cocoa over low heat.
- Stir mixture until smooth.
- Remove saucepan from heat and whisk in granulated sugar.
- Add eggs, one at a time, whisking after each addition to combine the eggs well.
- Whisk in vanilla and salt.
- Fold in flour with a rubber spatula or wooden spoon until well-combined.
- Stir in the remaining chocolate chips and one cup of peanut butter chips.
- Fill each muffin cup nearly full with the brownie batter.
- Sprinkle about 10-12 peanut butter chips over top of each muffin cup.
- Bake approximately 20-25 minutes at 350° until a toothpick inserted in center comes out clean and the brownie is set and edges are slightly puffed.
- Cool in pan 15 minutes before removing the muffin cups to a wire cooling rack to cool completely.
- Store in an air-tight container up to 3 days before refrigerating or freezing.
