Creamy Peas and Carrots

Creamy Peas and Carrots are delightful. Peas and Carrots are mixed in a sauce made with cream cheese, butter and heavy whipping cream. If the frozen vegetables are thawed beforehand, this side dish can be ready to serve in 10 minutes! It’s mouthwatering as well as hearty and filling.

This quick and easy 10-minute recipe is perfect for week night suppers. There are times when I’m short on time to prepare dinner. I like to pull out recipes like this for those times. Plus, it doesn’t have canned soups that a lot of side dish recipes come with. While you can’t consider this exactly a low-calorie recipe, it’s healthier than most and is gluten free for my gluten free followers.
Every Sunday night my husband and I work with another couple at our church. We provide a home-cooked meal, Bible study and prayer for the college age group. The gal I work with isn’t much of a cook. Most of the time, her husband does the cooking. I’m the planner. I like to know in advance what we’re having and buy groceries earlier in the week. They’re spur-of-the-moment folks. It’s whatever they find at Costco on Sunday after morning services. 🙂 She appreciates my organizational ability and I appreciate her spontaneity. It works. And it works well with the college kids. We balance each other out.
She also has severe Celiac disease so she has to be very careful. She has had multiple surgeries from blowing out her esophagus before they could even figure out the problem. I try to always make at least one thing that she can eat. Sometimes it’s hummus with veggie dippers. I almost always make some kind of exotic salad with homemade dressing. More often than not, I make a loaf of home-baked bread (for everyone else).
I made Creamy Peas and Carrots back in September along with a loaf of bread and a fruit tray. She loved it. On top of that, all the kids loved it. You wouldn’t think they’d eat something like that, but they’ve gotten used to my cooking over the past ten months of feeding them. They try anything now. 🙂
I had a couple of bags of frozen peas and carrots in my freezer that I really wanted to clear out. So I decided to make this side dish up based on my Creamy Sweet Corn and Creamy Sweet Peas recipes. It turned out mouthwatering. I was really glad to see the kids pile their plates with veggies. 🙂
This is a quick and easy side dish for holidays like Thanksgiving or Christmas, too. Creamy Peas and Carrots will work wonderfully, plus you don’t have to spend more than ten minutes in the kitchen. Quick. Easy. I like that!
Creamy Peas and Carrots is a delectable side dish.
It’s made with cream cheese, heavy whipping cream and butter. The sauce tastes outstanding!
Creamy Peas and Carrots is a terrific side dish to make for week night suppers when you’re short on time.
Here’s what I did.
I used these ingredients.
Heat a Dutch oven to low to medium heat. Add butter and cream cheese cut in cubes.
Whisk and heat until cheese melts – a few minutes.
Add thawed peas and carrots, salt, pepper and sugar.
Stir to combine and continue stirring frequently until peas and carrots are heated through – about 5 minutes.
Add heavy whipping cream.
Stir cream into peas and carrots and heat through about two more minutes until mixture is hot.
Serve Creamy Peas and Carrots with your favorite entree.

Creamy Peas and Carrots
Equipment
- 1 large Dutch Oven
- 1 butter knife to cut cream cheese in cubes
- 1 whisk
- 1 wooden spoon
- measuring cups
- measuring spoons
Ingredients
- 2 lb. bag frozen peas and carrots thawed (or up to 3 lbs.)
- 1/2 tsp. Salt and pepper to taste
- 1 tsp. granulated sugar
- 6 tbsp. unsalted butter
- 8 oz. block cream cheese cut in cubes
- 1/4 cup heavy whipping cream
Instructions
- In a sauce pan or Dutch oven, melt butter and cream cheese.
- Whisk frequently until mixture dissolves somewhat.
- Add the peas and carrots, granulated sugar, salt and pepper.
- Stir frequently so all the ingredients blend well together.
- Cook over low heat until peas and carrots are hot.
- This will take about 10-15 minutes, depending on how high the heat.
- Add the whipping cream and heat through.
