Back in early March we had a neighbor fall who ended up with a severe concussion and sprained wrist. Her husband was scheduled to have surgery and they had to fly in some of their kids to help take care of them during this time. John heard about it and I felt like we should take them a meal. We made them Pork Chop Supper (which includes potatoes and baby carrots), a loaf of Homemade Bread, this Apple Cheddar Tossed Salad and some homemade Applesauce Raisin Muffins.
They were thrilled with the meal telling us that the Pork Chops reminded them of her mother’s Smothered Pork Chops of a by-gone era. They also asked for the recipes for the bread and this delicious salad dressing! I changed up the salad dressing from the original recipe, but only slightly. I used avocado oil which is a much healthier oil than canola or other seed oils. I also added celery and grapes to the Tossed Salad. It was WONDERFUL!
