Caramel Pear Pie
What an amazing dessert this Caramel Pear Pie is! It’s filled with pears, of course, seasoned with cinnamon and nutmeg. It has an oatmeal streusel topping. After baking it’s drizzled with melted caramels combined with pecans. The pie is baked another ten minutes to set the caramel sauce and then it’s good to go! Well, you may want to allow it to cool first. 🙂

For Father’s Day last year I baked my son two homemade pies. My Mom’s Peach Pie recipe and this luscious Caramel Pear Pie. Sometimes he asks for my Mom’s Custard Pie but this time, I think I just made the Peach Pie since that was his childhood favorite. I actually made two of these Caramel Pear Pies so we could have one as well. Listen! Caramels are perfect in pie. 🙂 I also have a Caramel Pecan Pie that’s to die for!
Let me tell you! Pears and caramels go together just as well as with Candied Apples! And the oatmeal topping gives a completely different texture to the pie that’s absolutely scrumptious. This is a great dessert for company, holidays or just because you enjoy pears and caramels! Give it a try. You won’t be disappointed.
You’ll be swooning over every bite of Caramel Pear Pie!
The layer of melted caramels mixed with pecans is fantastic!
Every bite will knock your socks off. And of course, ice cream makes everything better! 🙂
Caramel sauce mixed with pecans is drizzled over the top of the pie and baked one last time.
Here’s what I did.
I used these ingredients for the pie filling.
Peel and slice the pears and toss into a large mixing bowl. Add lemon juice and toss pears to get good coverage.
In a small mixing bowl, combine quick cooking tapioca, granulated sugar, salt, cinnamon and nutmeg.
Stir ingredients to combine.
Pour sugar mixture over top of pears.
Stir ingredients to combine. Allow mixture to sit for 15 minutes.
Spoon pear mixture into unbaked pastry shell.
I used these ingredients for the oatmeal streusel topping layer.
Pour unbleached all-purpose flour into a mixing bowl. (Bleached flour toughens baked goods). Add granulated sugar and oatmeal.
Stir ingredients to combine; then cut in butter with a pastry blender.
Coarse crumbs will form.
Spread the oatmeal streusel topping over top of the pears in the pie shell. Bake at 400 degrees for 45 minutes.
While pie is baking, unwrap caramels and melt in a small sauce pan with half-and-half.
Continue stirring frequently until mixture is smooth and caramels are melted.
Add pecans.
Stir to combine.
After 45 minutes, remove pie from oven.
Spoon caramel/pecan sauce over top of the pie.
Try to get even coverage of the caramel sauce over top of the pie.
Return to oven and bake 8-10 minutes longer, until caramel sauce is set.
Allow pie to cool and then serve dolloped with ice cream, if desired.
Caramel Pear Pie is outrageously good!
This is a terrific dessert for company or holidays. Serve it with or without ice cream–as you desire.

CARAMEL PEAR PIE
(Recipe adapted from Taste of Home, Prize Winning Recipes, pg. 251)
Caramel Pear Pie
Equipment
- 1 9-inch deep dish pie plate
- 1 large mixing bowl
- 1 small mixing bowl
- 1 or 2 wooden spoons
- 1 sharp pairing knife
- 1 cutting board
- measuring cups
- measuring spoons
- 1 pastry blender
- 1 small sauce pan
- 1 nut chopper if nuts are not previously chopped
Ingredients
PIE FILLING:
- 6 cups pears peeled, cored, sliced (about 6 medium ripe pears)
- 1 tbsp. lemon juice
- 1/2 cup granulated sugar
- 2 tbsp. quick cooking tapioca
- 3/4 tsp. ground cinnamon
- 1/4 tsp. sea salt
- 1/4 tsp. ground nutmeg
- 1 unbaked pastry shell (9-inches)
TOPPING:
- 3/4 cup old-fashioned oatmeal
- 3 tbsp. granulated sugar
- 1 tbsp. unbleached all-purpose flour (bleached flour toughens baked goods)
- 1/4 cup salted butter cold
- 18 caramels unwrapped
- 5 tbsp. half-and-half
- 1/4 cup pecans chopped (or more, if desired) (measure after chopping)
Instructions
PIE FILLING:
- In a large mixing bowl, combine pears and lemon juice.
- In a small mixing bowl, combine ½ cup granulated sugar, tapioca, cinnamon, salt and nutmeg.
- Add dry mixture to pears and stir gently to combine.
- Allow mixture to stand for 15 minutes.
- Pour into pastry shell.
TOPPING:
- TOPPING: Unwrap caramels and set aside.
- In a small bowl combine oats, flour with 3 tbsp. granulated sugar.
- Cut in butter with a pastry blender until coarse crumbs form.
- Sprinkle crumbs over top of pears.
- Bake at 400° for 45 minutes.
- Meanwhile, in a small saucepan over low heat, melt caramels with milk or half-and-half.
- Stir until mixture is smooth; add pecans and stir again.
- Drizzle hot caramel mixture over top of pie.
- Bake 8-10 minutes longer at 400° until crust is golden brown and filling is bubbly.
- Cool pie on wire rack.
