Peanut Butter Bars
Okay, here is peanut butter, take two! Yesterday, I posted Peanut Butter Sandwich Cookies. Today I feature Peanut Butter Bars. These are delicious brownie-type bars filled with creamy peanut butter and oatmeal. Then they’re topped with chocolate chips. Finally, they’re glazed with a luscious peanut butter icing!

If you like peanut butter anything, you will love these rich bars! They are great for any occasion and really don’t take very long to whip up, either. Not only that, but you get your peanut butter fix and your chocolate fix at the same time!
I was looking for recipes to use up creamy peanut butter so I could remove some of the excess peanut butter jars cluttering up my pantry. I knew that if I looked through my plethora of Taste of Home cookbooks I could find something. I ended up going to their website and was not disappointed.

Peanut Butter Bars are filled with everything good–peanut butter and chocolate chips!
These iced blondies are scrumptious treats you will love. Especially if you enjoy peanut butter and chocolate together. You can see how I dolloped the icing over the top.
Peanut Butter Bars have a luscious peanut butter icing drizzled over the top that makes these bars so rich and decadent. I warn you in advance: if you like peanut butter and chocolate together, these delicious bars are addictive!
Here’s what I did.
Soften butter. It’s best to leave the butter out until it gets to room temperature in a couple of hours. I usually don’t always plan ahead so I microwaved the butter instead. This is a little TOO soft! Add brown sugar and white sugar.
Add creamy peanut butter, an egg, vanilla, baking soda and salt.
Mix with a mixer until smooth.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add oatmeal.
Stir with a wooden spoon to combine.
Spray a 9×13″ glass baking dish with cooking spray. Press peanut butter mixture into prepared pan.
Top with chocolate chips.
Bake at 350 for about 20-25 minutes or until a toothpick inserted in center comes out clean. This is fresh out of the oven. Allow pan to cool 10 minutes before applying Peanut Butter Icing.
To make Peanut Butter Icing: Place creamy peanut butter in a medium-sized mixing bowl.
Add powdered sugar. Then add half of the milk. Whisk ingredients with a whisk and then add as much of the remaining milk as you need to make of icing consistency.
This is what mine looked like. It’s not very thin.
Pipe icing or drizzle Peanut Butter Icing over top of the bars.

These hearty bars are quite filling as a result of the oatmeal and peanut butter.
They are nice and dense the way they are supposed to be. Your family will enjoy eating these cookies when you’re grilling outside, at tailgate or office parties, or the next time you sit down to watch a long movie!

Peanut Butter Bars
Equipment
- 1 9x13" glass baking dish
- 2 large mixing bowls
- 1 wooden spoon
- 1 whisk
- 1 electric mixer
- 1 spatula
- 1 wire cooling rack
Ingredients
PEANUT BUTTER BARS:
- 1/2 cup unsalted butter softened (1 stick)
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar packed
- 1/2 cup creamy peanut butter
- 1 large egg
- 1 tsp. vanilla extract
- 1 cup UNLBEACHED all-purpose flour bleached flour toughens baked goods
- 1/2 cup old-fashioned rolled oats
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1 cup semisweet chocolate chips 6 ounces
PEANUT BUTTER ICING:
- 1 cup confectioners’ sugar
- 4 tbsp. creamy peanut butter
- 8 tbsp. 2% milk
Instructions
PEANUT BUTTER BARS:
- In a large bowl, cream the butter, sugars, peanut butter, egg, vanilla, baking powder and salt with an electric mixer until fluffy.
- Stir in flour and oats with a wooden spoon until well combined.
- Spray a 13-in. x 9-in. baking dish with cooking spray.
- Press peanut butter mixture into dish.
- Sprinkle with chocolate chips.
- Bake at 350° for 20-25 minutes or until lightly browned.
- Cool on a wire rack for 10 minutes.
PEANUT BUTTER ICING:
- Combine powdered sugar, peanut butter and half the milk; whisk until as smooth as possible.
- Add a tablespoon of the remaining milk at a time and stir until you get the right spreading consistency.
- Use as little of the remaining milk as possible, but I couldn’t get it to have a spreading consistency until I used it all.
- Drizzle icing over top of bars.
- Cool completely.
- Cut into bars.
