Nutella Blondies
Oh, my heavens, Nutella Blondies are scrumptious beyond words! These delicious shortbread bars have Nutella drizzled over the top before baking. They are absolutely irresistible. I was busy baking all kinds of goodies for our Christmas Cookie Extravaganza this year and Nutella Blondies are one of those cookies that was included. Who doesn’t love Nutella, right? I thought it would be great on top of these blondies and I was right.

Okay, I tried a couple of versions of this recipe. I was hoping to swirl the Nutella into the cookie, but a shortbread base is too stiff. Instead, I drizzled softened Nutella spread over top of the crust layer before baking.
The swirls turned out lovely and these ended up being a real crowd pleaser. Nutella is too stiff to work with as is, so all I did was soften some in a bowl in the microwave for 20 to 30 seconds and by that time it could be drizzled over top of the blondie batter. While I chose to put the Nutella on in swirling patterns, anything you desire will work.

Here’s what I did.
I used these ingredients.
Place softened butter in a mixing bowl. Add oil, eggs, vanilla, sugar, powdered sugar, cream of tartar, baking soda and sea salt.
Mix with an electric mixer until smooth.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods.
Stir with a wooden spoon to combine.
Press mixture into a greased 12×19″ cookie sheet. Spoon out Nutella into a small bowl. Soften Nutella in microwave about 20-30 seconds or until spread can be drizzled. Drizzle Nutella over top of shortbread in swirling patterns.
Bake at 350 for 30-35 minutes or until a toothpick inserted in center comes out clean. Cool completely before cutting into bars.

NUTELLA BLONDIES
(My own concoction)
Nutella Blondies
Equipment
- 1 11x17" jelly roll pan
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 spatula
- 1 bamboo skewer to swirl Nutella into blondies, if desired
Ingredients
- 1 cup unsalted butter softened (2 sticks)
- 3/4 cup canola oil or use coconut oil or avocado oil
- 1 cup granulated sugar
- 1 cup powdered sugar
- 2 large eggs
- 1/2 tsp. cream of tartar
- 1/2 tsp. baking soda
- 1 tsp. sea salt
- 1 tsp. vanilla extract
- 5 1/2 cups UNBLEACHED all-purpose flour (Bleached flour toughens baked goods)
- 13 oz. Nutella (half of a 26-oz. jar)
Instructions
- Cream together butter, canola oil, sugars, eggs, vanilla, baking soda, cream of tartar and salt in a large mixing bowl with an electric mixer.
- Add flour and stir with a wooden spoon until very thoroughly mixed.
- Press dough into an 11x17” jelly-roll style cookie sheet.
- Soften Nutella in microwave about 20-30 seconds.
- Drizzle Nutella over top of cookie dough in swirling patterns, or as you prefer.
- Bake at 350° for 30-35 minutes or until lightly golden brown on top.
- Cool completely.
