Fudge Frosted Chunky Monkey Brownies
Boy, oh boy, I hit a Grand Slam with this recipe! Fudge Frosted Chunky Monkey Brownies are absolutely divine! These heavenly brownies start with my fantastic Chunky Monkey Brownies. Those highly rated brownies were originally made with chocolate baking melts which are huge. They disperse chocolate throughout the whole brownie. I used chocolate chunks for this recipe since I had them on hand. I was also trying to get rid of some pecans so I threw them into the mix.

Finally, I iced the brownies with my favorite Fudge Frosting. It didn’t hurt to add a little Blue Bell ice cream and some Ghirardelli chocolate sauce. 🙂 Yes, Fudge Frosted Chunky Monkey Brownies were awesome. They are triple the chocolate threat when you add the Ghirardelli chocolate sauce over top. It’s a terrific dessert for tailgating parties, potlucks, summer holiday fun or backyard barbecues.
I got a call a few weeks ago from our church secretary who asked if I could make some brownies for a youth/parent meeting. I made up a batch of Banana Sea Salt Caramel Blondies and these jewels. Both had icing and both were scrumptious. Our youth minister told me he and one of his student leaders sampled both of them. Both brownies were a rave in their opinions.
If you need a chocolate fix, it doesn’t get any better than Fudge Frosted Chunky Monkey Brownies. They’re sure to cure any sugar addiction or sweet tooth craving you’re having at the moment. But be warned! They are addictive. Once you start eating them, it’s hard to stop.
Fudge Frosted Chunky Monkey Brownies are the real deal.
These are terrific served with ice cream and Ghirardelli chocolate sauce on top.
They’re also terrific with just chocolate sauce on top.
Or you can enjoy Fudge Frosted Chunky Monkey Brownies plain. They’re still chocolaty, fudgy good.
Here’s what I did.
I used these ingredients for the brownie.
Soften butter. Add sugar, brown sugar, eggs, vanilla and salt.
Stir with a whisk or electric mixer to combine.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add chocolate chunks, finely diced pecans and mashed bananas.
Stir ingredients with a wooden spoon to combine.
Pat into a greased 9×13″ glass baking dish. I had to moisten my hands to do this.
Bake at 350 for 30-40 minutes or until a toothpick inserted in center comes out clean. Allow brownies to cool completely before adding fudge frosting.
I used these ingredients for the fudge frosting.
Melt butter and cocoa over low heat in a medium sized saucepan.
Remove from heat. Add powdered sugar and whisk until all has been incorporated.
Add a dash of salt and vanilla.
Stir to combine.
Working very quickly, spread fudge frosting over top of cooled brownies.
Allow icing to set up about 30 minutes before cutting into bars.
These terrific bars are great treats for tailgating parties.
Every bite is delightful.
These make great snacks for kid’s school parties, baby showers or potlucks.
This is a rich and decadent dessert when you add ice cream and chocolate sauce over top. 🙂

FUDGE FROSTED CHUNKY MONKEY BROWNIES
(My own concoction)
Fudge Frosted Chunky Monkey Brownies
Equipment
- 1 9x13" glass baking dish
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- 1 spatula
- measuring cups
- measuring spoons
- 1 rubber spatula
- 1 medium sauce pan
- 1 whisk
Ingredients
BROWNIES:
- 2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
- 1 1/2 cups brown sugar packed
- 1/2 cup granulated sugar
- 1 cup unsalted butter softened (2 sticks)
- 2 large eggs
- 1/4 tsp. sea salt
- 2 tsp. vanilla extract
- 1/2 cup banana mashed with a fork (about one medium-large banana)
- 12 oz. pkg. semi-sweet chocolate chunks or chocolate chips
- 1 cup pecans finely diced
CHOCOLATE FUDGE ICING:
- 3 tbsp. unsalted butter melted
- 2 tbsp. cocoa
- 2 cups powdered sugar
- 3 tbsp. 2% milk
- 1 dash salt
- 1 tsp. vanilla extract
Instructions
