Strawberry Rhubarb Dump Cake Cobbler is fantastic. This fruit-filled cobbler reminds you of old-timey flavors from Strawberry-Rhubarb Pie. But instead of pie, it’s made into a tasty cobbler instead. Every mouthful will have you drooling–especially if you like the combination of strawberry and rhubarb together. On top of that, as with all Dump Cake recipes, it’s so quick and easy. It’s a great dessert for potlucks, backyard barbecues or family reunions.

I found Strawberry Rhubarb Pie filling at the store a couple of months ago and picked up a few cans with the express intention of making this recipe. I needed a dairy free dessert for some friends who recently gained custody of a newborn. So I thought this dessert would be an easy remake to dairy free. Instead of pouring butter over the top like usual, I poured oil over top of the dry cake mix. It still cooked up wonderfully, although my personal preference is always butter!!! Still for those who need vegan or dairy free, this is a terrific option.
Dump Cakes are some of my favorite desserts. Peach, Cherry, Strawberry, Raspberry and Pumpkin are a few of these treasures. I love the ease of making these simple desserts. Most of the time you can have them oven-ready in about 5 minutes. Rarely do you find anyone who dislikes them. I love making these cobblers for company or holidays. While I always add coconut and nuts to a Dump Cake recipe, those items can be removed if you have food allergies.
I was making a dairy free meal for friends that included Slow Cooker Onion-Mushroom Pot Roast, a Dairy Free Garlic Herb Bread and this amazing dessert. They were so grateful for a meal their daughter could eat. Plus, the mother was so exhausted after getting hardly any sleep for several days that they appreciated a hot meal.
Because I made about 5 meals in a period of ten days, everything on this menu was super easy. I was too tired to spend a lot of time fixing really involved meals so this one was super easy.

This cobbler is so easy to make. You just dump everything into the pan and, as it cooks, everything comes together.
Here’s what I did.
I used these ingredients. Instead of the traditional butter, I used oil, keeping this recipe dairy free.
Spread pie filling into a greased 9×13″ baking dish.
Add coconut and finely diced pecans.
Spread dry cake mix over top of pecan layer.
Drizzle oil over top of cake mix. I found that I didn’t need as much oil as I normally use with melted butter.
Try to spread the oil as evenly as possible.
Bake at 350 for 45-60 minutes until the fruit starts bubbling up around the edges.
Serve with ice cream (if you don’t require a dairy free dessert).
Each bite of Strawberry Rhubarb Dump Cake Cobbler will have you drooling.

Strawberry Rhubarb Dump Cake Cobbler
Equipment
- 1 9x13" glass baking dish
- measuring cups
- 1 nut chopper if nuts are not previously chopped
- 1 wooden spoon
Ingredients
- 3 cans strawberry rhubarb pie filling Lucky Leaf makes this
- 1 cup coconut
- 1 cup pecans coarsely chopped, or about ½ cup finely diced pecans
- 18.25 oz. box butter recipe yellow cake mix (dry)
- 2/3 cup canola oil (or you can use 1 cup of melted butter if you don't need to keep the recipe vegan)
Instructions
- Spread pie filling in a greased 9x13” glass baking dish.
- Sprinkle with coconut.
- Sprinkle with pecans.
- Spread dry cake mix over top of other ingredients.
- Pour oil over top of dry cake mix.
- Bake at 350 for about 45-60 minutes or until bubbly around the edges.

My local grocery store doesn’t have the Duncan Hines butter recipe yellow cake mix. Would the regular yellow cake mix work alright?

I can’t wait to make it. I love rhubarb we use to eat it all the time when I was a kid living in Wisconsin now I live in Memphis Tn. People here haven’t heard of it. we use to put salt on them and some times sugar. I love everything in this desert . Thank you for the recipe. God bless

Thanks, Josephine. My parents grew up in Southeastern Ohio and it was popular there too. It’s not as readily available in stores in the south so perhaps that’s why people haven’t heard of it. The recipe is terrific. Hope you enjoy it.

Hi, Juju. Rhubarb is something that is commonly combined with strawberries. It has great texture but it is bitter by itself. (It looks like long stalks of celery but it’s reddish in color.) It needs to have a lot of sugar when making it without other fruit. But it’s delightful when properly cooked and sweetened.
