Mango Almond Spice Cookies
Oh, joy! Mango Almond Spice Cookies are as delectable as they come. This luscious cookie is filled with fresh mangos and sliced almonds. Then it’s iced with a divine lemon buttercream frosting. Heavenly doesn’t even begin to describe these extraordinary cookies.

I’ve made a couple of versions of this cookie before. I tried it with peaches a few years ago when I had 6 fruit bearing peach trees on our property before we moved to our present house. The original recipe calls for bananas and that’s a terrific cookie too. I happen to love making goodies with mangos so I thought I’d give this recipe a try and added some almonds to the batter as well.
I loved them, but then, anything with icing is almost always going to be a winner for me. 🙂 I love iced cookies and these Mango Almond Spice Cookies are wonderful. If you’re looking for a heavenly dessert for summer holidays, backyard barbecues or potlucks then you need to give these jewels a try. Be warned, though, these cookies are addictive.

These cookies are perfect for summer holiday fun.
Mango Almond Spice Cookies have the perfect blend of spices, fruit and nuts.
Here’s what I did.
I used these ingredients. I used ataulfo mangos which I prefer over the larger regular mangos.
Place shortening in a mixing bowl. Add brown sugar, baking soda, baking powder, salt, cinnamon and cloves.
Mix with an electric mixer until smooth and creamy.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add mangos and almonds.
Stir ingredients with a wooden spoon to combine. Using a one-quarter cup scoop, place scoopfuls of dough on greased cookie sheets. (I put the pan in the freezer for about 5 minutes so the cookies would hold their shape while baking).
Bake at 350 for 15-20 minutes. Cool completely before adding the frosting.
I used these ingredients for the frosting, plus water.
Cream butter with an electric mixer. Add half of the powdered sugar and mix again.
Add lemon juice, lemon zest, water and remaining half of the powdered sugar and mix until smooth and creamy.
Spread frosting over top of cooled cookies.
Sprinkle with additional lemon zest, as desired.

Mango Almond Spice Cookies
Equipment
- 1 18x26" cookie sheet pan
- 2 large mixing bowls
- 1 electric mixer
- 2 wooden spoons
- measuring cups
- measuring spoons
- 1 lemon zester or grater
- 1 1/4 cup cookie scoop
- 1 spatula
- 2 wire cooling racks
Ingredients
COOKIES:
- 1/2 cup unsalted butter softened to room temperature (1 stick)
- 1 cup brown sugar packed
- 2 large eggs
- 2 1/2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
- 1/4 tsp. baking soda
- 2 tsp. baking powder
- 1/3 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. ground cloves
- 1/2 cup almonds sliced
- 2 cups mangos peeled, finely diced (about 5 ataulfo mangos)
LEMON BUTTERCREAM FROSTING:
- 4 tbsp. unsalted butter softened
- 2 tbsp. lemon juice
- 1 tbsp. water
- 1 tsp. lemon peel grated
- 3 cups powdered sugar
Instructions
COOKIES:
- Mix butter, brown sugar, eggs, baking soda, baking powder, salt, cinnamon and cloves with an electric mixer until creamy.
- Add flour, almonds and mangos and stir well to combine.
- Using a ¼ cup cookie scoop, scoop out dough and place on greased cookie sheets.
- Chill dough about 5-10 minutes in the freezer.
- Bake at 350° 15-20 minutes or until done.
- Rotate cookie sheets on oven racks every six to seven minutes of baking time.
- Cool completely.
- Spread with Lemon Buttercream Frosting.
LEMON BUTTERCREAM FROSTING:
- Blend ingredients until smooth and of spreading consistency.
- Spread over top of Mango Almond Spice Cookies.
- Sprinkle additional lemon zest over top of each cookie, if desired.
