Healthy Gluten Free Chocolate Chip Cookies
Healthy Gluten Free Chocolate Chip Cookies are proof that eating gluten free is awesome! These lovely Chocolate Chip Cookies use Krusteaz gluten free flour, Madhava coconut sugar and organic dark chocolate chips along with other natural ingredients. They’re an incredibly delicious option for those who enjoy sweets but struggle with regular wheat-based flour or cane sugar.

Every now and then I get the urge for healthier sweets. I’ve made plenty of homemade muffins made with gluten free flour and coconut sugar. But this time I was really craving C-H-O-C-O-L-A-T-E!! As it happened, I noticed a couple of bags of organic dark chocolate chips in my pantry that I had picked up for a rainy day. While I don’t actually remove all the calories out of these cookies (!), they really are wonderful. Especially if you have gluten free family or friends that enjoy treats but can’t eat regular flour.
We went to a wedding in Spokane, Washington, back in early January. The mother of the bride made all kinds of delicious homemade cupcakes including several gluten free kinds. She told me she used Krusteaz for the flour. I had not seen it in stores in the Dallas Metroplex yet, so when I saw it last month at the grocery store I snatched up a bag. I wanted to see how it would work with cookies. These cookies turned out ooey, gooey and sooooo delicious! I ate so many of them I had to stash a bunch of them in the freezer so I wouldn’t be looking at the container every time I walked into the kitchen.

Healthy Gluten Free Chocolate Chip Cookies are amazing.
These treats are great for tailgating parties.
Because I used two bags of organic dark chocolate chips, the cookies were very gooey inside.
Here’s what I did.
I used these ingredients.
Soften butter. Add coconut sugar, eggs, vanilla, baking powder, baking soda and sea salt.
Cream ingredients with an electric mixer until smooth.
Add gluten free flour and dark chocolate chips.
Stir ingredients with a wooden spoon to combine well.
Scoop out dough using about 2/3 or 3/4 of the one-quarter size scoop.
Place on greased cookie sheets. I sprayed the pans with coconut oil cooking spray.
Bake cookies at 350 for about 13-15 minutes.
Seriously, these cookies will be gobbled down instantly. 🙂

HEALTHY GLUTEN FREE CHOCOLATE COOKIES

Healthy Gluten Free Chocolate Chip Cookies
Equipment
- 2 18x26" cookie sheet pans
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 spatula
Ingredients
- 1 cup unsalted butter softened (2 sticks)
- 2 cups coconut sugar
- 2 large eggs
- 2 1/2 tsp. real vanilla extract (no imitation vanilla flavoring)
- 3 cups gluten free all-purpose flour (I used Krusteaz) or your favorite gluten free flour
- 3/4 tsp. sea salt
- 1 tsp. baking powder
- 1 tsp. baking soda
- 20 oz. bag organic dark chocolate chips (two 10-ounce bags)
Instructions
- Preheat oven to 350°.
- In a large mixing bowl, mix the butter, sugar, eggs, vanilla, salt, baking powder and baking soda with an electric mixer until smooth.
- Stir in flour and chocolate chips with a wooden spoon to combine.
- Stir well to combine; this may take 3-5 minutes.
- Shape dough with hands into golf ball-sized dough balls and place a couple inches apart on greased cookie sheets.
- Bake for 13-15 minutes or until edges are light brown.
- Rotate cookie sheets on oven racks every six minutes of baking time.
- Cool completely.
