Almond Toffee Bars
Almond Toffee Bars are absolutely spectacular. The bottom layer is like shortbread. Then the top layer combines toffee, coconut and almonds. After baking, the bars are sprinkled with powdered sugar. Yes, these bar-type cookies are so, so mouthwatering.

We finally got through most of our freezer cookies at the end of last year. So it was time for me to stock up the freezer again. John likes to give them away as treats on a regular basis. I’m always culling through cookbooks and Internet sites for new baking ideas. I actually had saved this electronically years ago but had never made it. I was looking for a few recipes where I had all the ingredients on hand. I didn’t want to have to make a trip to the grocery store. So when I checked out this ingredient list, I decided to go for it.
I have to admit, these bars turned out fantastic. Each bite was so drool-worthy. They are perfect for tailgating parties, potlucks, even for Valentine’s Day or the Super Bowl. They’re great for family or company. If you enjoy toffee, you’ll love these delicious blondie-type bars. While they are not some of the most beautiful bars you will ever see, they certainly are some of the best tasting. They will surely cure any sweet tooth craving you have, too. If you enjoy the flavors of toffee, coconut and almonds, these cookies are a “must make” for you! Better get on it. These will be eaten up fast.
Almond Toffee Bars are spectacular!
Shortbread forms the crust and there’s a toffee filling with coconut and almonds. So delicious.
We loved the way Almond Toffee Bars turned out.
Here’s what I did.
I used these ingredients.
For the crust layer: Soften butter; place in a mixing bowl. Add Crisco shortening and part of the brown sugar.
Mix with an electric mixer until well combined.
Add UNBLEACHED all-purpose flour.
Continue mixing with mixer until coarse crumbs form. This will take about a minute.
Press crumbs into a greased 9×13″ glass baking dish.
Bake at 350 for 10 minutes or until the edges start to brown.
Meanwhile, make toffee layer: Place eggs, remaining brown sugar, vanilla, baking powder and salt in a mixing bowl.
Whisk ingredients until smooth.
Add coconut and almonds.
Stir to combine.
Spread toffee filling over top of hot, baked crust.
Continue baking at 350 for 30-45 minutes or until the center is firm to the touch.
Cool completely before sprinkling with powdered sugar and cutting into bars.
Almond Toffee Bars are irresistible.

ALMOND TOFFEE BARS

Almond Toffee Bars
Equipment
- 2 large mixing bowls
- 1 electric mixer
- 1 wooden spoon
- 1 spatula
- 1 9x13" glass baking dish
- 1 whisk
- measuring cups
- measuring spoons
Ingredients
- 1/4 cup unsalted butter softened
- 1/4 cup Crisco vegetable shortening (no substitutes)
- 1 1/2 cups brown sugar firmly packed, divided use
- 1 cup UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
- 2 large eggs
- 1 tsp. baking powder
- 1/2 tsp. sea salt
- 1 tsp. vanilla extract
- 1 cup sweetened shredded coconut
- 1 cup almonds slivered, (I used sliced almonds)
- 1/4 cup powdered sugar to sprinkle over top
Instructions
- Preheat oven to 350°.
- In a bowl, with an electric mixer at medium speed, beat the butter, shortening and 1/2 cup brown sugar until smooth.
- Add the flour and continue mixing until a coarse grain forms.
- (I mixed for about a minute).
- Press flour mixture onto the bottom of a lightly greased 9x13” glass baking dish.
- Bake for 10 minutes, or until the edges begin to brown.
- To make toffee: In a large mixing bowl, whisk the eggs, 1 cup brown sugar, baking powder, salt and vanilla until creamy.
- Fold in the coconut and almonds.
- Pour coconut-almond mixture into the pre-baked crust.
- Continue baking 30 to 45 minutes at 350° or until the center is set.
- Cool baking dish completely on a cooling rack.
- Sprinkle with powdered sugar.
- Slice bars into finger-size portions to serve.

i really loving your site first i saw that raspberry donuts and noe this seems to be delicious! its look like a halwa which is famous in south asian countries!
