Chocolate lovers, you are going to LOVE these delightful Almond Brownies! Luscious, decadent, chocolaty brownies are filled and topped with sliced almonds providing the most spectacular taste. I love the ooey-gooeyness of the brownie coupled with the crunchiness from the almonds. It’s really awesome.
Years ago when my husband worked for the Baptist Convention of New England (early 1990s), the wives of staff members got together and wanted to put together a cookbook of our favorite recipes. That project never got completed but I was the one responsible for collecting (and hounding) people for recipes.
A couple of years after we moved to Texas I found an envelope of stuff in a box I hadn’t sorted through after we moved and found a bunch of these recipes. This one came from Nena Meimaris. Both Nena and her husband, Ignatius, came from Thessaloniki, Greece, but had been living in the states about 10-15 years by that time. They were a dear couple that we really enjoyed being with. Nena gave me several recipes, including several Greek wedding cookie recipes and other side dish recipes that I treasure.
I have had “Almond Brownies” in my big 3-ring-binder for at least 15 years before finally getting around to trying it a week ago. I’m really sad that I waited so long because this recipe is really easy, and it’s also incredibly delicious–certainly one worth making often, especially if you enjoy chocolate like I do.
The problem is you can only make so many things at once! I try not to get stuck in cooking ruts, but I do every now and then. I made up a couple of batches of these cookies for the wedding of a friend John works with. Yum. Thankfully, these were shared with our co-worker’s wedding guests, otherwise I would have eaten more than my share. I was fortunate enough to have another sample today, though. 🙂
If you’re looking for a chocolate fix, or you just want a quick and easy (and scrumptious) brownie recipe, then give Almond Brownies a try sometime. I’m not sure if Nena got this recipe in Greece or here, but it’s certainly a keeper. If you love chocolate and you love almonds, making this recipe is practically mandatory! I think you’ll agree that the taste of these sensational brownies is worth making again and again and again.

Be warned! Almond Brownies are additive!
Here’s what I did.
Place softened butter, sugar, eggs and vanilla in a mixing bowl. Mix with an electric mixer to combine.
Melt baking chocolate over low heat. Add to mixture in bowl and mix again.
Now the chocolate mixture has been added to the sugar mixture.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Also add almonds.
Stir with a wooden spoon to combine.
Spray a 9×13″ baking dish with cooking spray. Spread chocolate batter into pan and smooth the top. Sprinkle almonds over top.
Bake at 350 for 45-55 minutes or until toothpick inserted in center comes out clean.
To serve: Cut in squares and place on serving trays. Watch the Almond Brownies disappear!
Almond Brownies are rich, dense, and have a lovely texture.

ALMOND BROWNIES
(Recipe adapted from Nena Meimaris, Baptist Convention of New England, now living in Thessaloniki, Greece)

- 4 oz. Baker’s unsweetened chocolate melted
- 1 cup unsalted butter softened
- 2 cups sugar
- 4 large eggs
- 2 tsp. real vanilla extract not imitation
- 1 cup Gold Medal UNBLEACHED all-purpose flour bleached flour toughens baked goods
- 2 cups almonds chopped or sliced, divided use

- Add chocolate and mix again.
- Stir in flour and 1 cup of almonds until combined.
- Spray a 9x13” glass baking dish with cooking spray.
- Pour brownie mixture into prepared pan.
- Sprinkle remaining cup of almonds over top.
- Bake at 325° 45-55 minutes or until a toothpick inserted in center comes out clean.
