Sausage Cheese Grits Casserole

Sausage Cheese Grits Casserole is the ultimate in Southern cooking. This amazing casserole is just what the doctor ordered to spruce up Southern-style grits. These grits include sausage and cheese in a soufflé like texture that is comfort food at its best. One really nice thing about this casserole is you mix it up the day before. It refrigerates overnight. Then all you have to do is pop it in the oven an hour or so before you want it ready.

I’ve been making this casserole for years. We used to serve it frequently for our Sunday school class when we lived in Cedar Hill. Everyone always gobbled it up. Recently, I made it for our Young Adult group (college-age) when we hosted them for breakfast after church one Sunday. I served it with Chocolate Chip Donuts, a Hash Brown Potato Casserole with Ham, lots of fresh fruit, Cheesy O’Brien Egg Scramble and Sausage Biscuits and Gravy.
Even people who don’t usually care for grits enjoy it in this amped up form. What’s not to like about a casserole with lots of cheese and sausage? The sausage adds real depth and flavor to an otherwise bland food. It’s not only delicious to eat, but so easy to make. When I’m making a lot of recipes for a gathering of people, it’s nice to be able to make things a day ahead. That allows for a lot less work the day of the event.
Another nice thing about this dish is it’s gluten free. If you have family members who have gluten intolerance, this dish is naturally gluten free.
If you’re into Southern-style food, you’ll absolutely love this recipe. And, even if you’re not, you really should indulge yourself in the experience one time. You may change your mind in a hurry after a few bites of this delicious dish.

Cheese and sausage really amp up the flavors of grits in this fun Southern-style dish.
Here’s what I did.
I used these ingredients.
Fry sausage. Drain and set aside.
Prepare grits according to package directions.
Place cooked grits in a mixing bowl.
Add cooked sausage and cheddar cheese.
Stir ingredients to combine.
Whisk eggs in a mixing bowl. Add milk.
Whisk to combine.
Add egg mixture to sausage mixture.
Stir to combine.
Add melted butter and garlic powder.
Stir to combine again.
Pour ingredients into a greased 9×13″ glass baking dish. Cover with plastic wrap and refrigerate overnight.
Remove from refrigerator about 30 minutes before baking. Remove plastic wrap. Bake, uncovered at 350 for one to one-and-a-half hours or until casserole is completely set.
This is a terrific casserole to serve for holiday, company or weekend breakfasts.
I served Sausage Cheese Grits Casserole with Hash Brown Potatoes with Ham. Both were yummy.

SAUSAGE CHEESE GRITS CASSEROLE

Sausage Cheese Grits Casserole
Equipment
- 1 9x13" glass baking dish
- 1 large stock pot with lid
- 1 skillet
- 1 hamburger chopper to break meat into small pieces while frying
- measuring cups
- measuring spoons
- 1 medium mixing bowl
- 1 whisk
- 1 wooden spoon
Ingredients
- 4 cups hot, cooked grits
- 1 lb. bulk pork sausage cooked, crumbled and drained well
- 2 1/2 cups sharp cheddar cheese shredded (10-oz.)
- 3 large eggs
- 1 1/2 cups 2% milk I used 2% but any kind will work
- 4 tbsp. unsalted butter melted
- 1/4 tsp. garlic powder
Instructions
- Cook grits according to package directions.
- Set aside.
- Meanwhile, fry sausage until no longer pink.
- Use a hamburger chopper to break the meat down in small pieces while frying.
- Drain and set aside.
- In a large bowl, mix grits, sausage and cheese.
- Beat eggs and milk in a separate bowl; stir into grits.
- Add butter and garlic powder.
- Transfer to a greased 9x13” baking dish.
- Cover and chill 8 hours or overnight.
- Remove from the refrigerator 30 minutes before baking.
- Bake, uncovered, at 350° for 1 hour or until a knife inserted near the center comes out clean.
- Let stand 5 minutes before cutting.
