Pecan Bars are really delightful. These bars start with a rich, chocolate chip cookie dough but are filled with pecans instead. I spread them out like brownies instead of making cookies. They turned out extremely rich and scrumptious.

My husband overbought about 15 large bags of pecans during the holidays. I looked at all those extra bags and scratched my head. What on earth was I going to do with all those pecans? I added several additional cookies to our Christmas Cookie Extravaganza baking list. That’s what I did!

I made a Pumpkin Pecan Cookie which everyone loved. My Butterscotch Pecan Spice Cookies were originally going to be made without pecans. But I threw a few bags of pecans into that batch of cookies as well. We also made a few hundred extra Coconut Date Balls and Pecan Treats to get rid of some of them. Finally, I made these Pecan Bars to get through a few more bags of pecans. I still have several bags of pecans in my freezer for future projects, but I got rid of two-thirds of them, thankfully.

We had several people tell us that the Pecan Bars were their personal favorites in the cookie bags this year. If you can eat nuts, they’re really something special. Probably not quite as delectable as Pecan Pie, but almost as good. 🙂 They certainly are a lot easier to make than pie, and if you have an over abundance of pecans it’s a great recipe to use them up!

I served Pecan Bars during the holiday season, but these are marvelous any time of the year. They’ll cure any sweet tooth craving and the crunchy texture can’t be beat.

Soften butter. Add sugar, brown sugar, eggs, vanilla, baking soda and salt.

Mix ingredients with an electric mixer until smooth.

Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add chopped pecans.

Spray an 18×25″ baking sheet with cooking spray. Press mixture into prepared cookie sheet.

Bake at 350 degrees for 25-30 minutes or until lightly browned and a toothpick inserted in center comes out clean.

Pecan Bars are ultra scrumptious. These rich bars are filled with pecans providing a rich, crunchy taste and texture that's out of this world. They'll cure any sweet tooth craving and then some! Marvelous dessert for potlucks, tailgating parties, special occasions or holidays.

  • 1 11x17" jelly roll pan
  • 1 large mixing bowl
  • 1 electric mixer
  • 1 wooden spoon
  • 1 nut chopper if nuts are not previously chopped
  • measuring cups
  • measuring spoons
  • 1 spatula

Ingredients
  

  • 1 1/2 cups unsalted butter softened (3 sticks)
  • 1 1/2 cups brown sugar firmly packed
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 2 tsp. vanilla extract
  • 4 1/2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
  • 1 1/2 tsp. baking soda
  • 1 tsp. sea salt
  • 3 cups pecans coarsely chopped (measure after chopping)

Instructions
 

  • Preheat oven to 350°.
  • Grease or spray a large 11x17" jelly roll pan with cooking spray.
  • In large bowl, combine butter, sugars, vanilla, eggs, salt and baking soda.
  • Beat at medium speed with an electric mixer until fluffy.
  • Stir in flour and pecans with wooden spoon until well combined.
  • Spread mixture into cookie sheet and pat down slightly to smooth top.
  • Bake at 350 degrees for about 25-30 minutes, or until lightly browned and a toothpick inserted in center comes out clean.
  • Cool completely before cutting into bars.

Notes

NOTE: Be careful not to over-bake the bars or they may dry out.

    I only made a half of a batch and glad I did. These are good, but quite bland. Won’t make them again. Sorry. I wasted a lot of ingredients on these. Pecans not cheap.

      Hi, Sue. Sorry you didn’t like them. If they didn’t have enough flavor for you, you can always add additional sugar or vanilla.
