Peanut Butter Chocolate Chip Oatmeal Cookies
Oh my, these Peanut Butter Chocolate Chip Oatmeal Cookies are mouthwateringly good. 🙂 Seriously, these Oatmeal Cookies include both chocolate chips and peanut butter chips for maximum flavor and deliciousness. We couldn’t get enough of ’em.

My husband had a stroke back in early June. After in-patient rehab he began attending an out-patient Day Neuro program the first week of August. The program lasted 16 weeks and was pretty grueling and tiring for him. We started sending in cookies weekly beginning the second week of treatment.
About half way through, John asked his main physical therapist what her favorite cookie was. She promptly told him Chocolate Chip Oatmeal Cookies. I didn’t have a recipe, but I threw one together based on my favorite Chocolate Chip and Oatmeal Cookie recipes. When they turned out so fantastic, I decided to try my hand at it again. This time instead of all chocolate chips, I used a bag of Peanut Butter chips along with chocolate chips. Truly, they were spectacular. I loved the cookies and ate more than my share. 🙂
Peanut Butter Chocolate Chip Oatmeal Cookies are terrific for Christmas Cookie Exchanges, holiday or tailgating parties, or any time you need a quick pick-me-up. I found them pretty addictive so I was glad I only saved out a dozen for us before sending the rest to Day Neuro. Still, we gorged and enjoyed every single one. Enjoy.

Here’s what I did.
I used these ingredients.
Soften butter. Add sugar, brown sugar, eggs, vanilla, baking soda, baking powder and salt.
Mix with an electric mixer until smooth.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add oatmeal, peanut butter chips and chocolate chips.
Stir ingredients to combine.
Roll mixture into balls and place on greased cookie sheets.
Bake at 350 degrees for about 12 to 15 minutes or until done. My cookies took about 18 minutes to bake. Be sure to rotate cookie sheets on racks every six minutes while baking.

PEANUT BUTTER CHOCOLATE CHIP OATMEAL COOKIES
(My own concoction)
Peanut Butter Chocolate Chip Oatmeal Cookies
Equipment
- 4 18x26" cookie sheet pans
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- 1 spatula
- measuring cups
- measuring spoons
Ingredients
- 1 cup unsalted butter softened (2 sticks)
- 1 cup light brown sugar packed
- 1 cup granulated sugar
- 2 large eggs
- 2 tsp. vanilla extract
- 3 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. sea salt
- 1 1/2 cups rolled oats (I prefer the old-fashioned oatmeal rather than quick oats)
- 12 oz. bag semi-sweet chocolate chips
- 10 oz. bag Reese's peanut butter chips
Instructions
- In a medium bowl, cream butter, sugars, eggs, vanilla, baking powder, baking soda and salt with an electric mixer until smooth.
- Stir in flour, oats, peanut butter chips and chocolate chips with a wooden spoon until ingredients are well incorporated.
- Stir thoroughly; this may take 4-5 minutes.
- Roll mixture into balls and drop onto lightly sprayed cookie sheets.
- Bake at 350° for 12-15 minutes or until done.
- Rotate cookie sheets on oven racks every six minutes while baking.
- Cool completely.
