Cherry Cobbler with Almond Glaze is one fantastic dessert. This amazing dessert got rave reviews when I sent it out to John’s office a couple of weeks ago. There was not a smidgeon left!

This is another vintage recipe I got from a friend. I added the almond glaze on top, but the rest of the recipe is hers. It’s layered kind of like a casserole and you don’t stir the ingredients together.
First, there’s a melted butter layer. Then a flour batter is spooned over top but not stirred into the melted butter. A cherry layer is spooned over top of the batter layer, but this layer is also NOT mixed in. It all mixes together while it bakes. After baking, I added a delicious Almond Glaze to tie everything together.
Cherry Cobblers are pretty popular here in Texas. Along with Peach Cobblers, they’re the next big thing. That’s not to say that Texas Sheet Cake doesn’t have its place, but who doesn’t love cobbler?
I received a 20-pound box of fresh cherries from the Northwest Cherry Growers in Washington state in July 2019. They wanted me to blog about my experiences with their cherries that year. All I can say is their cherries were the biggest, plumpest most delicious cherries I’ve ever tasted. They are so much larger than what you normally get in the grocery store.
I made ten desserts with their cherries that year. I actually baked the 10 desserts in six days. This was one of the last desserts I made that final day. It turned out wonderfully well. Like I said earlier, everyone who sampled it at John’s office really raved over it. That’s always a good sign. 🙂 The recipe turned out so well that I’m sharing it with you again! 🙂

Cherry Cobbler with Almond Glaze is so mouthwatering.
Here’s what I did.
I used these ingredients for the cobbler.
Preheat oven to 375. Melt butter in a 9×13″ glass baking dish in oven while you make the batter and the cherry filling.
Place UNBLEACHED all-purpose flour in a mixing bowl. (Bleached flour toughens baked goods). Add one cup of the sugar, baking powder and salt.
Stir ingredients to combine.
Add half-and-half or milk.
Stir ingredients to combine.
Pour flour batter evenly over top of melted butter in a 9×13″ glass baking dish. DO NOT STIR ingredients together.
Meanwhile, pit and halve cherries. Place in a saucepan with remaining sugar and lemon juice.
Stir ingredients to combine and bring to a boil.
The sugar will melt down. Remove from heat and add almond extract. Stir to combine.
Gently spoon cherries as evenly as possible over the batter in the baking dish.
Bake at 375 about 40 to 45 minutes, or until cherries are cooked and top is brown. Allow cobbler to cool completely before adding glaze.
I used these ingredients for the Almond Glaze.
Whisk ingredients to combine.
Drizzle Almond Glaze over top of cooled Cherry Cobbler.
Allow icing to set and harden about 15 minutes before serving.
Cherry Cobbler with Almond Glaze is really terrific with ice cream.

CHERRY COBBLER WITH ALMOND GLAZE

Cherry Cobbler with Almond Glaze
Equipment
- 1 9x13" glass baking dish
- 1 mixing bowl
- 2 wooden spoons
- 1 small mixing bowl
- 1 whisk
- 1 cherry pitter or sharp knife to pit cherries
- 1 medium sauce pan
- measuring cups
- measuring spoons
Ingredients
CHERRY COBBLER:
- 1/2 cup unsalted butter (one stick)
- 1 cup UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
- 2 cups granulated sugar
- 1 tbsp. baking powder
- pinch sea salt
- 1 cup half-and-half or whole milk
- 4 to 5 cups fresh cherries pitted and halved
- 1 tbsp. lemon juice
- 1 tsp. almond extract
ALMOND GLAZE:
- 1 cup powdered sugar
- 1 tsp. almond extract
- 1 tbsp. half-and-half
Instructions
CHERRY COBBLER:
- Preheat oven to 375 degrees.
- Melt butter in a 9x13” glass baking dish.
- Meanwhile, combine flour, 1 cup granulated sugar, baking powder and salt in a mixing bowl.
- Add milk (or half-and-half).
- Stir just until dry ingredients are moist.
- Pour batter over butter in baking dish.
- (Do NOT stir.)
- Bring 1 cup granulated sugar, cherries, and lemon juice to a boil in a medium sauce pan over medium to high heat, stirring constantly.
- Remove from heat.
- Stir in almond extract.
- Pour over batter in baking dish.
- (Do NOT stir).
- Bake at 375 degrees for 40-45 minutes or until the top is brown.
- Allow cobbler to cool completely before adding glaze.
ALMOND GLAZE:
- Combine ingredients with a whisk and drizzle over cooled cobbler.
