I have another fantastic overnight oatmeal recipe for you today. Strawberry Shortcake Overnight Oatmeal. This recipe uses the fewest ingredients and is probably the simplest of my oatmeal recipes. But if you’re a strawberry lover like me, you’ll enjoy this one just as much.
I started up making large batches of oatmeal for my husband for breakfast when his cholesterol levels came back too high. Steel-cut oats are so much healthier than regular, but they’re much better slow-cooked for a creamier, softer texture that isn’t chewy or tough. I made all the recipes vegan since he needs to stay off extra high cholesterol foods. So there’s no butter or milk in these recipes. Instead, I use oat milk which increases the fiber and tastes even better than almond milk. I get it at our local Walmart, but I have to get it early in the mornings before they sell out.
I also made this recipe sugar free since sugar increases cholesterol levels as well. (Go figure!) You can add a sprinkle of brown sugar or maple syrup on top of each serving if you like, but it’s actually pretty tasty and sweet enough as it is. If you add additional sliced strawberries on top of each bowlful, you’ll certainly find that sugar is not needed.
The one product that will be helpful for this recipe is a programmable crockpot. This recipe only takes 5 hours to be completely done. If you let it cook longer the oatmeal will start sticking to the sides of the crockpot and will dry out. So setting a timer for when you want the oatmeal finished is a real plus.
Strawberry Shortcake Overnight Oatmeal is wonderful for family breakfasts, but it’s also spectacular for company or holiday breakfasts. Prepare it the night before and you’re good to go in the morning. I usually break it down into small containers and either refrigerate it for the week, or freeze for later use. Just add a dollop of oat milk when reheating and it turns out heavenly. Let’s go!

If you have a programmable crockpot, this is the way to go. Just set it for when you want breakfast in the morning and the oatmeal is ready to go!
Here’s what I did.
I used these ingredients, plus water.
Pour a package of steel-cut oats into a mixing bowl. These are also referred to as pin oats and Irish oats.
Add sea salt, vanilla and diced strawberries.
Add Oat Milk. I purchase this at my local Walmart but I have to get it early in the morning before they sell out!
Add water.
Stir ingredients to combine.
Spray a large crockpot with cooking spray. Add oatmeal mixture and stir with a wooden spoon to disburse the oats as well as possible.
Cook 5 hours on low setting. If possible, stir once or twice during cooking (if you cook during the day time).You don’t have to do this, but I like it stirred up a little when I can.
Serve with sliced strawberries if desired.
Every spoonful of Strawberry Shortcake Overnight Oatmeal is mouthwatering.

Strawberry Shortcake Overnight Oatmeal will get your engines revving in the morning! This healthy and delicious breakfast is made in the slow cooker overnight. It uses steel-cut oats which turn out extra smooth and creamy when cooked slowly. Adding a dose of Strawberry Shortcake flavor amps up the flavors wonderfully. These oats are vegan, gluten free and sugar free so even those on special diets can enjoy them!
24oz. pkg.steel-cut oats(I used Bob’s Red Mill known as pinhead oats or Irish oats)
48oz. containerCalifia Farms oat milk
3cupswater
1tbsp.vanilla extract
1tsp.pink Himalayan sea salt
4cupsstrawberriesdiced, fresh
Instructions
Spray a large 6 or 7-quart crockpot very generously with cooking spray.
Combine oats, oat milk, water, sea salt, vanilla and strawberries and spread into crock pot.
Cook on low heat overnight for approximately 5 hours.
Serve garnished with fresh strawberries slices, if desired.

NOTE: You can portion out the servings into microwavable glass or plastic containers. Refrigerate for up to one week and microwave before serving.NOTE: You can also freeze the cooked oatmeal in the same type of containers. Remove from freezer and allow to defrost in refrigerator a day or so before using and microwaving as noted above.NOTE: Overnight oatmeal is something of a misnomer. This recipe was done in about 5 hours in my slowest crockpot.NOTE: The key to this recipe is not overcooking the oatmeal so it sticks onto the sides of the crockpot. Five hours is really all you need.NOTE: This recipe is easiest if you have a slow cooker with a programmable timer.
