Christmas Cookie Extravaganza – 2021
I don’t make very many crunchy cookies. I usually make them with a softer chewier texture. But I loved Crunchy Peanut Butter Chocolate Chip Cookies. These lovely Peanut Butter Cookies include chocolate chips for a burst of flavor. Or I could just as easily say, these Chocolate Chip Cookies have a dab of crunchy peanut butter in them to amp up the flavors! 🙂 Either way works.

When I started out my Christmas Cookie Extravaganza cookie list this year, I made mostly tried and true recipes. But I wanted to make a couple of new ones, so I tossed in some Lemon Curd Almond Bars, Iced Pumpkin Chocolate Chip Cookies and Molasses Date Cookies. I also added this cookie along with several small batches of cookies made with Paradise candied fruit.
We weren’t planning on doing any more Christmas Cookie Extravaganzas. But my husband begged me to make up cookies for our neighborhood so we could get to know our neighbors a little better. That has been the best part of this process. We also made up trays to take out to his former place of employment as well as doctor’s offices, church offices and other friends. I baked almost every day in October and the first week of November. It was exhausting but finally the Christmas baking is over for 2021.
Now we get to sit back and enjoy the holiday season. We’ve never baked cookies quite so early before, but it was really nice being able to have a de-stressed Thanksgiving and Christmas season because all the holiday baking was done early.
If you enjoy peanut butter and chocolate, you’ll love these cookies. If you have sweet tooth cravings, these are just about perfect. 🙂
Crunchy Peanut Butter Chocolate Chip Cookies are whopper-sized cookies.
These cookies are terrific for holiday baking.
They’re also great for Christmas Cookie Exchanges.
These crunchy cookies are gooey on the inside with all those chocolate chips.
Here’s the recipe.
I used these ingredients, plus hot water.
Soften butter. Add sugar, brown sugar, crunchy peanut butter and eggs.
Mix with an electric mixer until smooth.
Add baking soda, salt and vanilla.
Add hot water.
Mix again with an electric mixer until all the ingredients are incorporated into the dough.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add chocolate chips.
Stir with a heavy spoon to combine.
With a large cookie scoop, place cookie dough on ungreased cookie sheets about three to four inches apart. These cookies expand a lot while baking. (If you want the cookies to spread less, freeze on cookie sheets about 10-15 minutes before baking).
Bake at 350 degrees for 12 to 15 minutes or until done. I took the cookies out while they were still raising. They flatten out as they cool.
This recipe makes about 2 1/2 dozen whopper-sized cookies.
Crunchy Peanut Butter and chocolate chips go so well together.
Take a plate of these cookies to your office and watch them disappear.

CRUNCHY PEANUT BUTTER CHOCOLATE CHIP COOKIES

Crunchy Peanut Butter Chocolate Chip Cookies
Equipment
- 2 18x26" cookie sheet pans
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- 1 spatula
- measuring cups
- measuring spoons
- 1 1/4 cup cookie scoop
Ingredients
- 1 cup light brown sugar packed
- 1 cup granulated sugar
- 1 cup extra crunchy peanut butter
- 3/4 cup unsalted butter (1 1/2 sticks)
- 2 large eggs
- 1 tsp. real vanilla extract
- 1/4 tsp. sea salt
- 1 tsp. baking soda
- 2 tbsp. hot water
- 2 to 2 1/4 cups UNBLEACHED all-purpose flour (Bleached flour toughens baked goods)
- 12 oz. pkg. semi-sweet chocolate chips
Instructions
- Mix brown sugar, granulated sugar, peanut butter, butter and eggs in a large mixing bowl with an electric mixer until smooth.
- Add vanilla, salt, baking soda and hot water and mix again until well blended.
- Stir in flour and chocolate chips with a wooden spoon until combined.
- Drop with a large cookie scoop or large tablespoon onto ungreased cookie sheets.
- Bake at 350° about 12-15 minutes or until done.
- Rotate cookie sheets on racks after eight minutes.
- Cool completely.

My son is celiac and therefore very strictly GF. He loves cookies but the bought GF are so expensive and actually not THAT nice. He loves peanut butter and choc chip cookies, so it made sense to combine these two favourites. WHAT A SUCCESS! Thank you for the recipe, it’s a keeper.

Hi Nadine. I’m so glad your son enjoyed the recipe. When I make GF recipes, I prefer using Cup4Cup flour. But yes, gluten free flour is very expensive. I’ve recently tried a Walmart brand that wasn’t near as expensive and the cookies actually turned out quite well.

Yes, Lynn, the recipe calls for 2 to 2 1/4 cups flour (towards the bottom of the recipe card).
