Butterfinger Surprises
Butterfinger Surprises are so delightful. These Peanut Butter Cookies contain Butterfinger Bits in every bite. So if you enjoy Butterfingers, these cookies are for you! I loved the way these cookies turned out. Because I used a large cookie scoop, they’re mammoth sized and just loaded with flavor.

I made these cookies a couple of months ago for a dessert I took to a potluck at our church for Empty Nesters. I sent some home with some friends who love cookies. These cookies were very well received especially because they’re Peanut Butter Cookies in disguise! Adding the Butterfinger Bits makes them even more delicious.
Since I use a large cookie scoop to make these cookies, they take a little longer to bake. Even still, these are really substantial cookies. They’re whoppers and they’re oh, so good. Seriously, every bite will have you drooling.

Butterfinger Surprises will knock your socks off!
These Peanut Butter Cookies are filled with Butterfinger Bits!
You’ll be drooling over every bite.
These whopper-sized cookies almost make up a meal!
Here’s what I did.
I used these ingredients.
Soften butter. Add granulated sugar, brown sugar, crunchy peanut butter, vanilla and eggs.
Mix with an electric mixer until smooth.
Place UNBLEACHED all-purpose flour in a mixing bowl. (Bleached flour toughens baked goods). Add salt, baking soda and baking powder.
Stir really well to combine.
Add flour mixture and Butterfinger Bits.
Stir very well with a heavy metal spoon, until all the flour has been worked in. This may take a couple of minutes but make sure the mixture is no longer floury.
Scoop out dough with a large cookie scoop. I usually pack it in really well so the ingredients adhere well.
Place cookie dough balls on greased cookie sheets.
Bake cookies at 350 degrees for 12 to 15 minutes or until done. Rotate cookie sheets on racks every 6 minutes during baking time.
Now it’s time to sit down with a glass of milk and enjoy a stack of Butterfinger Surprises. 🙂

BUTTERFINGER SURPRISES

Butterfinger Surprises
Equipment
- 2 18x26" cookie sheet pans
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- 1 sharp knife to chop Butterfinger bars or baking bits
- 1 spatula
- 1 1/4 cup cookie scoop
- measuring cups
- measuring spoons
Ingredients
- 1 cup unsalted butter softened
- 1 cup crunchy peanut butter
- 3/4 cup light brown sugar packed
- 3/4 cup granulated sugar
- 2 large eggs
- 1 1/2 tsp. real vanilla extract
- 2 1/2 cups UNBLEACHED all-purpose flour (Bleached flour toughens baked goods)
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. sea salt
- 20 oz. bag Butterfinger bits (two 10-ounce bags)
Instructions
- Preheat oven to 350 degrees.
- Cream butter, peanut butter, sugars, eggs and vanilla in a large mixing bowl with an electric mixer until fluffy.
- Stir flour, baking powder, baking soda and salt together; gradually stir dry ingredients into mixture.
- Stir in Butterfinger bits until mixture is well mixed and no longer floury.
- Stir thoroughly; this may take 4-5 minutes.
- Scoop cookie dough with a large cookie scoop and place on greased baking sheets.
- Bake 12 to 15 minutes or until lightly browned.
- Rotate cookies on racks every 6 to 7 minutes of baking time.
- Cool completely.

I loved your blog post about trying new recipes and sharing your family’s favorite recipes. I’ve always wanted to try to make some of your recipes, but I’m terrified of cooking. I can’t imagine making these cookies for a party though, I think that might be too much for me.

Waaaait!!! Which Butterfinger cookie of yours do you prefer? They all look like perfection. Are there textural differences?

Hi Stephanie. Yes they’re all different. This one has the most body of all of them. It’s also a peanut butter cookie with Butterfingers added, rather than the dough for a chocolate chip cookie with Butterfingers added, if that makes sense. (I like all of them, but this one is one of my favorites).
