Caramel Apple Muffins
Caramel Apples are fantastic. It’s even better when you bring a little bit of caramel apple to muffins! These luscious Caramel Apple Muffins have caramels embedded in the middle, then they’re topped with a delightful oat-streusel topping before baking. Each bite is sweet, crunchy and a little over-the-top because of the caramels. Yum.

I was asked to make some breakfast foods for the hosts and hostesses (ushers and greeters) at our church for Easter Sunday morning. Many of them would be helping at the 6:30 Sunrise service as well as the 8:00 a.m. service. The coordinator thought it would be nice if she provided something for all of them for breakfast, because she knew many would slip out of the house without eating beforehand.
However, she doesn’t like to cook. So she called me and said, “They would probably like your goodies a whole lot better than anything I can make out of a box.” We debated with what kind of food to make. In the end, she wanted finger foods that did not require a fork or spoon to eat with. I suggested muffins.
She always gives me a lot of latitude in deciding what to make. I chose to make four kinds of muffins: Maple Bacon, Raspberry Cream, Blueberry Cream and these Caramel Apple Muffins. It ended up making between 5-6 dozen muffins so she shared them with her 9:30 a.m. and 11:00 a.m. teams as well. One guy told me he packed about four muffins in his pockets! Hahaha!

Prepare to be WOWED after one bite of these outrageous muffins!
Here’s what I did.
I used these ingredients for the muffins.
Place flour in a mixing bowl. Add granulated sugar, baking powder, salt and cinnamon.
Stir ingredients to combine; set aside.
In a medium mixing bowl, melt butter.
Add heavy whipping cream.
Add vanilla and egg.
Whisk ingredients well to combine.
Add apples.
Stir to combine.
Add wet mixture to dry mixture.
Stir to combine, but don’t over-mix.
Unwrap caramels and set aside.
Line muffin tins with paper liners. Spray each liner well with cooking spray. Spoon about 1/4 cup of the muffin batter into prepared liners. Place a caramel in the centers.
Spoon batter over top of the caramels filling the muffin tins almost to the top.
I used these ingredients for the streusel topping.
Melt butter in a small mixing bowl. Add oatmeal, brown sugar, cinnamon and chopped pecans.
Stir ingredients to combine.
Sprinkle two tablespoons oat streusel mixture over top of each muffin. Press down slightly so ingredients will adhere to the muffins.
Bake at 425 degrees for 5 minutes. Reduce heat to 350 degrees. Bake an additional 15-19 minutes, or until a toothpick inserted in center comes out clean.
Caramel Apple Muffins are rich and decadent.

CARAMEL APPLE MUFFINS
(Recipe inspired from Taste of Home)
Caramel Apple Muffins
Equipment
- 1 12-tin regular muffin pan
- 1 6-tin regular muffin pan
- muffin liners
- 1 large mixing bowl
- 2 wooden spoons
- 1 medium mixing bowl
- 1 whisk
- 1 sharp knife to peel and dice apples
- 1 nut chopper if nuts are not previously chopped
- 1 small mixing bowl
- measuring cups
- measuring spoons
Ingredients
MUFFINS:
- 2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
- 3/4 cup granulated sugar
- 2 tsp. baking powder
- 1/2 tsp. sea salt
- 2 1/2 tsp. ground cinnamon
- 1 cup half-and-half or 2% milk or can use heavy whipping cream
- 1/4 cup salted butter melted
- 2 tsp. pure vanilla extract
- 1 1/2 cups Gala apple peeled and diced
- 18 caramels unwrapped
STREUSEL TOPPING:
- 1/2 cup light brown sugar packed
- 1 scant cup old-fashioned oatmeal dry
- 4 tbsp. salted butter melted (1/4 cup or 1/2 stick)
- 1 tsp. ground cinnamon
- 1/3 cup pecans finely chopped (measure after chopping)
Instructions
MUFFINS:
- Preheat oven to 425º.
- Place muffin liners in a 12-tin regular muffin pan and a 6-tin regular muffin pan.
- Spray each liner with cooking spray; set aside.
- In a large mixing bowl, combine flour, granulated sugar, baking powder, cinnamon and salt.
- In a separate bowl combine egg, milk, butter and vanilla with a whisk.
- Stir in apples.
- Combine egg mixture with flour mixture and stir just until mixed.
- DO NOT OVERMIX!
- Spread batter into prepared muffin liners about ¼ to ½ full.
- Place a caramel in center of each muffin.
- Cover the muffin with more batter filling to almost the top of the muffin tin.
- Sprinkle about two tablespoons of streusel topping over top of each muffin.
- Bake at 425º for 5 minutes.
- Reduce heat to 350º and continue baking an additional 15-19 minutes or until a toothpick inserted in center comes out clean.
STREUSEL TOPPING:
- Melt butter in a small mixing bowl.
- Add remaining ingredients.
- Stir until well combined.
- Sprinkle two tablespoons of streusel over top of each of the 18 muffins.
- Press streusel topping lightly into the muffin batter so ingredients will adhere.
- Bake as directed above.
