Coconut Meltaways
If you’re a coconut fiend like I am, Coconut Meltaways will knock your socks off! These Sugar Cookies filled with coconut and vanilla chips simply dissolve in your mouth. Every bite causes me to swoon over these heavenly cookies. They are easy to whip up and terrific for tailgating parties or potlucks since each batch makes over 5 dozen! I included vanilla chips in mine which added extra sugar and decadence! Yes, they cookies are marvelous.

I made some Coconut Chocolate Chip Meltaways and really enjoyed the way they turned out. So I made this one with vanilla chips and liked these as well. The texture of these cookies is just about perfect! We sure enjoyed them. I shared them with two families at our church who I was making a meal for. Yes, these cookies were A+!
I offered to bring a meal for some friends from church. Cathy had fallen badly while on vacation and had a very bad concussion. Her vision was affected, along with headaches and other difficulties. I made up a real southern-style meal for them which included BBQ Pork, Deviled Eggs, Homemade Rolls, Corn Pudding, Pear Salad with Glazed Walnuts, Scalloped Potatoes and Ham and these luscious cookies. They loved EVERYTHING! And were so thankful to have some food for a few days that they didn’t have to cook.
Coconut Meltaways are an excellent choice for tailgating parties, potlucks, holiday baking or as snacks to bring to soccer or baseball practices. These pack up nicely and they also freeze extremely well if you want to make them in advance for any kind of party. If you enjoy coconut, you’ll treasure these jewels.

Prepare to swoon over Coconut Meltaways!
Here’s what I did,
I used these ingredients.
Soften butter. Place in a large mixing bowl. Add powdered sugar, granulated sugar, eggs, pure vanilla extract, cream of tartar, baking soda and salt.
Add oil.
Mix with an electric mixer until completely smooth.
Add unbleached flour. (Bleached flour toughens baked goods). Add vanilla chips and coconut.
Stir ingredients with a wooden spoon until thoroughly mixed.
Roll dough into golf ball-sized balls.
Roll cookie balls in granulated sugar until thoroughly covered.
Place cookie balls on greased cookie sheets.
Bake at 350 degrees approximately 12-15 minutes. Rotate cookie sheet pans on oven racks after 8 minutes of baking time. My cookies took about 18-19 minutes to bake.
Allow cookies to cool before serving.
The vanilla chips add extra sweetness, the coconut adds texture.

COCONUT MELTAWAYS
(My own concoction)
Coconut Meltaways
Equipment
- 3 18×26" cookie sheet pans
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- 1 small bowl
- measuring cups
- measuring spoons
- 3 wire cooling racks
- 1 spatula
Ingredients
- 1 cup salted butter softened, (2 sticks)
- 1 cup canola oil or use avocado oil
- 1 cup granulated sugar
- 1 cup powdered sugar
- 2 large eggs
- 5 cups unbleached all-purpose flour (bleached flour toughens baked goods)
- 1 tsp. cream of tartar
- 1 tsp. baking soda
- 1 tsp. sea salt
- 2 tsp. pure vanilla extract
- 2 cups sweetened coconut
- 24 oz. bag vanilla chips or premiere white baking chips
- 3/4 cup granulated sugar to roll the cookies in
Instructions
- Combine butter, oil, granulated sugar, confectioners’ sugar, eggs, baking soda, cream of tartar, salt and vanilla extract in a large mixing bowl.
- Mix with an electric mixer until creamy and smooth.
- Stir in flour, coconut and Vanilla Chips with a wooden spoon and mix thoroughly.
- Shape cookies into golf ball-sized balls.
- Roll in granulated sugar until cookie balls are thoroughly coated.
- Put 3" apart on cookie sheets that have been sprayed with cooking spray.
- Bake at 350° for 12-15 minutes.
- Rotate cookie sheets on oven racks after 8 minutes of baking time.
- Cool.

I’m confused as well! Is it one cup or one stick (1/2 cup per stick)? Thanks for the clarification. The cookies sound wonderful.

these look wonderful – I’m a little confused – it says 1 cup butter (1 stick) but isn’t 1 stick 1/2 cup?
