
Butterscotch Oatmeal Cookies
My husband loved these delicious Butterscotch Oatmeal Cookies. He loves a good Oatmeal Cookie anyway, but add coconut, pecans and Butterscotch Chips and he thought they were incredibly good. And they were! I stocked our freezer with them in small bundles of two or three cookies and John pulled them out every so often and had a nibble. Yum.

As it happened, I made Butterscotch Oatmeal Cookies and Cinnamon Oatmeal Cookies just a day apart back in January. I was trying to get rid of several bags of excess coconut left over from Christmas cookie baking. So I whipped up Coconut Meltaways, Coconut Chocolate Chip Meltaways and these two cookies to get rid of some of the coconut! Our neighbors sure enjoyed all those cookies!
These cookies have a lot of body with oatmeal, coconut, pecans and Butterscotch Chips. I usually scoop the dough with a large, one-quarter cup scoop and pack the dough into the scoop about 7/8 full. I pack the dough so it easily releases from the scoop and doesn’t crumble when you press it onto the cookie sheet pan. It bakes up into a really large and satisfying cookie with great texture and taste.

Butterscotch Oatmeal Cookies are fantastic!

These chewy cookies are big on butterscotch taste!

Butterscotch Oatmeal Cookies are loaded with oatmeal, Butterscotch Chips, pecans and coconut.

I use a large cookie scoop to size the dough so these cookies turn out quite large.
Here’s what I did.

I used these ingredients.

Soften butter. Add to a large mixing bowl with granulated sugar, packed brown sugar, eggs, baking powder, baking soda, salt and vanilla extract.

Mix ingredients with an electric mixer until smooth.

Add unbleached all-purpose flour. (Bleached flour toughens baked goods). Add oatmeal, coconut, chopped pecans and Butterscotch chips.

Stir really well to combine.

Scoop out and pack dough into a large cookie scoop about 7/8 full.

Grease cookie sheet pans. Place cookie dough on pans.

Bake cookies at 350 degrees for about 17-22 minutes or until done. Rotate cookie sheets on oven racks after 9 minutes of baking time. (My cookies took 18-19 minutes to bake).

Eat away!

Butterscotch Oatmeal Cookies are excellent to serve at tailgating parties, potlucks, backyard barbecues or Family Reunions.

Sit down with a stack and a glass of cold milk. Yum.

BUTTERSCOTCH OATMEAL COOKIES
(My own concoction)

Butterscotch Oatmeal Cookies
Equipment
- 2 18×26" cookie sheet pans
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- 1 nut chopper if nuts are not previously chopped
- 1 spatula
- 1 large cookie scoop
- measuring cups
- measuring spoons
- 2 wire cooling racks
Ingredients
- 2 cups unbleached all-purpose flour (bleached flour toughens baked goods)
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. sea salt
- 1 cup granulated sugar
- 1 cup light brown sugar packed
- 1 cup salted butter softened (2 sticks)
- 2 large eggs
- 1 tsp. pure vanilla extract
- 2 cups old-fashioned oatmeal dry
- 1 cup sweetened coconut
- 1 cup pecans or walnuts, chopped (measure after chopping)
- 24 oz. pkg. butterscotch chips (two 12-ounce packages)
Instructions
- Preheat oven to 350°F.
- Grease two large cookie sheet pans.
- Set aside.
- In a large mixing bowl, mix together the butter, brown sugar, granulated sugar, eggs, vanilla, baking powder, baking soda and salt.
- Blend well with an electric mixer until smooth.
- Stir in flour, coconut, oatmeal, Butterscotch chips and pecans until thoroughly mixed.
- Press cookie dough into a ¼ cup scoop using a scant measure (about 7/8 full).
- Press firmly or the dough will crumble when you drop the scoopfuls of cookie dough onto a cookie sheet.
- Space cookies 2 to 3 inches apart on greased baking sheets.
- Bake for 17 to 22 minutes or until lightly browned and just set.
- Rotate cookie sheets on oven racks after 9 minutes of baking time.
- Transfer to wire racks to cool completely.
