Grilled Chicken Thighs with Onions

Oh, I love, love, LOVE these Grilled Chicken Thighs with Onions! The seasoned onions are cooked until almost caramelized and they go wonderfully spread on top the Grilled Chicken Thighs just before serving. On top of that, the recipe is healthy, low calorie and gluten free for those concerned about that sort of thing.

Recently I made a recipe called Steaks with Peppery Onions. It was so good, I decided to try it with chicken thighs as well. It was mouthwateringly good! I served it with Loaded Bacon and Cheese Potatoes, Chunky Maple Applesauce, Green Beans with Garlic Rosemary Butter, Spicy Honey-Brushed Carrots and Roasted Parsnips. Yum. We enjoyed everything so much. And the nice thing about the chicken is that it reheats exceptionally well. Since there are only two of us, I enjoyed the leftovers of this recipe and all those other veggies and fruit for about a week’s worth of lunches!
I seasoned the chicken thighs with garlic salt, paprika and Italian seasoning before grilling them. While the chicken thighs were grilling I sautéed the Vidalia onions (sweet onions) in a combination of butter and olive oil. I added a sprinkle of salt and pepper and finely minced garlic. They were wonderful. The onions were so flavorful over top of the grilled chicken thighs. Add in all those other veggies and we enjoyed every morsel. 🙂
While I used chicken thighs, you can use boneless, skinless chicken breasts or even boneless, skinless chicken thighs if you desire. Just cook the meat over a medium heat until an internal temperature of 165 degrees has been reached. Then eat and enjoy!
Grilled Chicken Thighs with Onions is an incredibly delicious main dish entree.
These chicken thighs are even good reheated!
I served the chicken thighs with Green Beans with Garlic Rosemary Butter, Loaded Bacon and Cheese Potatoes, Spicy Honey-Brushed Carrots, Roasted Parsnips and Chunky Maple Applesauce. It was a meal that delighted the taste buds!
Besides steak, chicken thighs are probably my favorite cut of meat. These were sensational with the sautéed onions.
Here’s what I did.
Season the chicken thighs with garlic salt, paprika and Italian seasoning on both sides.
Cook on a medium heat approximately 10-12 minutes per side.
Flip chicken thighs over and grill remaining side about 10-12 minutes over medium.
While the chicken thighs are grilling, slice onions and mince the garlic.
Melt the butter and olive oil together in a very large skillet. Add garlic.
Add onions, salt and pepper.
Stir to combine and cook over low to medium heat until onions are tender, about 15-20 minutes.
Once the onions are done, remove from heat. Serve with or over top of the chicken thighs.
Remove onions to a serving platter. Top with grilled chicken thighs.
Most of the time we purchase packages of chicken thighs that come 10-to-a-pack.
We served Grilled Chicken Thighs with Onions with Roasted Parsnips and Spicy Honey-Brushed Carrots.
Every bite was lip-smacking good!
These chicken thighs are healthy, low calorie and gluten free.
While I used four Vidalia Onions to make this recipe, if you enjoy a lot of onions, you can always add more.

GRILLED CHICKEN THIGHS WITH ONIONS
(Recipe inspired from Steaks with Peppery Onions)
Grilled Chicken Thighs with Onions
Equipment
- 1 gas grill or charcoal or electric grill
- 1 plate
- 1 large skillet
- 1 sharp knife to slice onions and mince garlic
- 1 cutting board
- measuring spoons
Ingredients
- 4 medium Vidalia onions or sweet onions
- 1 tsp. garlic finely minced
- 1 tsp. sea salt
- 3/4 tsp. ground black pepper
- 2 tbsp. olive oil
- 1 tbsp. salted butter
- 10 medium chicken thighs
- 1 tsp. garlic salt or as desired
- 1 tsp. paprika or as desired
- 1 tsp. Italian seasoning or as desired
Instructions
- In a large skillet over medium heat, cook the onions, garlic and salt and pepper in oil and butter mixture.
- Cook and stir frequently about 15-20 minutes, or until the onions are golden brown.
- Meanwhile, season chicken thighs with garlic salt, paprika and Italian seasoning.
- Grill chicken thighs on gas grill over medium heat until the chicken reaches an internal temperature of 165º.
- (Approximately 10-12 minutes per side for medium heat).
- Remove chicken thighs to a serving platter.
- Garnish with sauteed onions.
- Serve.

Grilled Chicken Thighs with Onions is nice enough to serve for company dinners.
The sweet Vidalia Onions add great flavor to this recipe.
You can skin the chicken thighs, if you desire. But I prefer to leave the skins on.
This sumptuous meal was perfect with Green Beans with Garlic Rosemary Butter, Loaded Bacon and Cheese Potatoes, Spicy Honey-Brushed Carrots, Roasted Parsnips, Chunky Maple Applesauce and the Grilled Chicken Thighs with Onions.
