Cinnamon Apple Coffee Cake
You’ll be captivated by this utterly delicious coffee cake recipe. It is certainly drool-worthy! Cinnamon Apple Coffee Cake is one of those sweet breakfast treats or snack cakes for dinner that’s hard to say “no” to! It starts with a yellow cake mix and cream cheese pudding and pie filling. The apples are grated for this recipe and put between two cake batter layers. A walnut-cinnamon-streusel topping is added on top making this cake perfectly scrumptious.

I was recruited in early March to take a meal to a young couple in our church who had a new baby in NICU at the hospital. I made a String Cheese Manicotti, Fruit and Nut Salad, Homemade Bread and this easy Cinnamon Apple Coffee Cake for dessert. They were so pleased to have a home-cooked meal in between running back and forth to the hospital every day.
I had to make a few changes to the original recipe. It is almost impossible to get a 9-ounce box of cake mix any more. Jiffy used to make them, but no one seems to stock that size these days. So I used a 13.25-ounce box of yellow cake mix instead. As a result, I added some half-and-half to ensure the batter wasn’t excessively dry. (I wasn’t about to measure out and weigh 9-ounces of cake mix!) I also didn’t have instant vanilla pudding mix, so I substituted cheesecake pudding and pie filling mix instead. That was also a great substitution.
I used Honey Crisp apples but I think any kind of sweet apple would work. The interesting thing about this recipe is that it calls for grated apples rather than diced. Regardless, the fruity apple flavor comes through delectably in this lovely cake. The walnut-cinnamon streusel is spread over the apples and then again over the top layer making this cake irresistible in my opinion.

Here’s what I did.
I used these ingredients, plus half-and-half. HEB sells thicker sticks of butter. And while this picture gives the appearance of using only two tablespoons of butter, it’s actually four.
Pour cake mix into a mixing bowl. Add cheesecake pudding mix, eggs, melted butter and sour cream.
Whisk to combine. I added half-and-half so the mixture wasn’t so dry.
Whisk or stir to combine.
Spread half of the batter into a greased 9×9″ glass baking dish.
Peel and core apples; then shred. Layer shredded apples over top of the batter in baking dish.
Combine granulated sugar, cinnamon and walnuts in a small mixing bowl.
Stir to combine; sprinkle half of the walnut mixture over top of the apples in baking dish.
Gently spread remaining cake batter over top of the apples and the walnut-cinnamon streusel layer. You will probably need to dollop the batter over top and then use a table knife to gently spread the batter until you get decent coverage over top. (Batter is thick).
Sprinkle the remaining streusel topping over top of the cake batter.
Bake cake at 350 degrees for 50-55 minutes, or until a toothpick inserted in center comes out clean.
Cool before serving.
Cinnamon Apple Coffee Cake turned out nice and moist.
My husband has always liked coffee cake that’s moist and fruity. No dry cakes for him!

CINNAMON APPLE COFFEE CAKE

Cinnamon Apple Coffee Cake
Equipment
- 1 9×9" glass baking dish
- 1 food grater or food processor
- 1 paring knife
- 1 cutting board
- measuring cups
- measuring spoons
- 1 nut chopper if nuts are not previously chopped
- 1 whisk
- 1 wooden spoon
- 1 large mixing bowl
- 1 small mixing bowl
Ingredients
- 13.25 oz. box yellow cake mix
- 3.4 oz. box instant cheesecake pudding mix or instant vanilla pudding mix
- 2 large eggs
- 1/2 cup sour cream
- 1/4 cup salted butter melted (1/2 stick)
- 1/2 cup half-and-half or whole milk
- 2 extra large Honey Crisp apples peeled, cored and shredded (or use apples of your choice)
- 1/2 cup granulated sugar
- 1/2 cup walnuts chopped (measure after chopping)
- 1 tsp. ground cinnamon
Instructions
- Peel, core and then grate apples with a grater; set aside.
- In a large mixing bowl, beat the cake mix, pudding mix, eggs, sour cream, half-and-half and butter with an electric mixer for 2 minutes.
- Mixture is very thick.
- Pour half of the mixture into a greased 9-inch square glass baking dish.
- Top with shredded apples.
- Combine the granulated sugar, nuts and cinnamon in a small bowl.
- Sprinkle half of the sugar mixture over top of the apples.
- Top with remaining batter and remaining sugar mixture.
- Bake at 350º for 50-55 minutes, or until a toothpick inserted in center comes out clean.
- Cool on a wire rack.
