Oh my! I drooled and drooled over these luscious Mint Chocolate Fudge Brownie Cups! These delicious brownies are made in miniature muffin pans and include cocoa, a semi-sweet chocolate baking bar, chocolate chips and mint fudge-flavored baking chunks. (Think Andes Mints). Talk about swooning! Yes, we swooned over these delectable treats.

I made ten batches for Christmas cookies this year, and one of the batches slipped slightly when I retrieved it from the oven. So there were several of these jewels that were not good enough to put in bags for Christmas gifts, but were certainly mouthwatering enough for me to sample (even if some of the brownie cups were in clumps!) My husband and I both loved these amazing Mint Chocolate Fudge Brownie Cups. 🙂
I have since made them several times for company and other events. Without a doubt, these Mint Chocolate Fudge Brownie Cups are spectacular. I purchase the Mint Fudge-Flavored Baking Chips at our local Walmart. They carry them year-round, so I periodically pick up a few packages and bake something with them. Yum.
I’ve used these Mint Fudge-Flavored Baking Chips before in Mint Chocolate Fudge Cookies and Mint Chocolate Fudge Tea Cakes. I also made a Gluten Free Mint Chocolate Fudge Brownie and a Gluten Free Mint Chocolate Fudge Cookie! They are a winner every time I use them. And they turned out extraordinarily well in this amazing brownie cup recipe. I recommend them for tailgating parties, potlucks, backyard barbecues or a Christmas Cookie Exchange. The sky is the limit! 🙂
Mint Chocolate Fudge Brownie Cups are rich, decadent, divine!

These brownie cups are rich with chocolate flavor. They include cocoa, semi-sweet chocolate chips, a semi-sweet chocolate baking bar and chocolate from the mint fudge-flavored baking chips. YUM!
I could have eaten a whole pan of these decadent brownies!
Here’s what I did.
I used these ingredients.
In a medium saucepan, melt butter with cocoa, baking chocolate and part of the mint fudge-flavored baking chips. This picture reflects more than a single batch.
Melt ingredients over low to medium heat, stirring frequently. Once everything is melted, remove from heat. Allow mixture to cool for 5-10 minutes.
Add granulated sugar.
Stir ingredients with a whisk to combine.
Add eggs, one at a time, whisking well after each addition.
Here, all the eggs have been whisked into the mixture.
Add vanilla and salt.
Whisk again to combine.
Add unbleached all-purpose flour. (Bleached flour toughens baked goods).
Stir well to combine.
Add semi-sweet chocolate chips and mint fudge-flavored baking chunks.
Stir again to combine.
Spray miniature muffin tins very generously with cooking spray. Spoon brownie mixture into the tins almost to the top.
Bake at 350 degrees about 10 minutes before rotating pans on oven racks; bake another 10 minutes or until a toothpick inserted in center comes out clean.
Allow brownie cups to cool in pans until completely cool. Remove to platters to serve.

I purchase the mint fudge-flavored baking chunks at Walmart. It’s their store brand substitute for Andes Mints. They are terrific in baked goods.

MINT CHOCOLATE FUDGE BROWNIE CUPS
(My own concoction)
Mint Chocolate Fudge Brownie Cups
Equipment
- 2 24-tin miniature muffin tins (you will only need about 39 slots)
- 1 medium saucepan
- 1 wooden spoon
- 1 whisk
- measuring cups
- measuring spoons
Ingredients
- 1/2 cup salted butter (1 stick) or use unsalted butter
- 4 oz. block semi-sweet baking chocolate broken into pieces or coarsely chopped
- 1/3 cup cocoa
- 1 1/2 cups granulated sugar
- 3 large eggs
- 1 tsp. pure vanilla extract
- 1/2 tsp. sea salt
- 1 cup unbleached flour (bleached flour toughens baked goods)
- 10 oz. pkg. mint fudge-flavored baking chunks (or Andes Mints)
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350°.
- Spray 39 miniature-sized muffin cups with cooking spray.
- Set aside.
- In a small saucepan, melt butter, semi-sweet chocolate, ½ cup mint fudge-flavored baking chunks and cocoa over low heat.
- Stir mixture until smooth.
- Remove saucepan from heat and whisk in granulated sugar.
- Add eggs, one at a time, whisking after each addition to combine the eggs well.
- Whisk in vanilla and salt.
- Fold in flour with a rubber spatula or wooden spoon until well-combined.
- Stir in chocolate chips and remainder of the bag of mint fudge-flavored baking chunks (about one cup).
- Fill each muffin cup full with the brownie batter.
- Bake approximately 20-22 minutes at 350° until a toothpick inserted in center comes out clean and the brownie is set and edges are slightly puffed.
- Cool in pan completely before removing to serving platter or storage container.
- Store in an air-tight container up to 3 days before refrigerating or freezing.
