Cherry White Chocolate Cookie Cups
Cherry White Chocolate Cookie Cups are out-of-this-world good! No kidding. These miniature cookie cups start with a Chocolate Chip Cookie Dough, but use candied cherries and real white chocolate chips, instead. I baked them in miniature muffin tins and they turned out marvelously. So said our neighbors–everyone raved over them. 🙂

It took three times to get this recipe perfected! The first batch overflowed the muffin tins so they were hard to get out. I added additional flour so the cookie cups wouldn’t expand quite so much during baking for the second batch and still they were not quite what I wanted in appearance. Finally, I added MORE FLOUR and the cookie cups turned out perfectly. In fact, I kept giving the neighbors all my “fails” and I had at least 10 different people tell me these treats were to “die for!” So even the goofs that didn’t come out of the muffin tins very well were actually delicious. 🙂
Cherry White Chocolate Cookie Cups were part of our Christmas Cookie Extravaganza this year. We made loads and loads of cookie cups and all kinds of flavors and they have been a big hit with everyone who have already received our Christmas gift bags and tins. I think I baked over 12 batches of this recipe, so my pictures reflect large amounts. Hopefully, you will get the idea on consistency and texture needed for these cookie cups.

Cherry White Chocolate Cookie Cups are great for tailgating parties during the holiday season when candied cherries are available.
Here’s what I did.
I used these ingredients. Bear in mind, my pictures below reflect mega batches of these cookie cups.
Soften butter and put in a mixing bowl. (Remember this is several batches). I left the butter out overnight to soften.
Add brown sugar, granulated sugar and eggs.
Add vanilla.
Mix with an electric mixer until smooth.
Add unbleached all-purpose flour (bleached flour toughens baked goods). Add chopped candied cherries and real white chocolate chips.
Stir mixture with a spoon until very well combined.
Spray miniature muffin tins with cooking spray. Form dough into golf ball-sized balls and place in muffin tins.
Bake at 350 degrees for 18-20 minutes until a toothpick inserted in center comes out clean and cookie cups are firm to the touch. Rotate cookie cups on oven racks after 9 minutes of baking time.
Allow cookie cups to cool completely in muffin pan before removing to serve.
Every bite is oh, so good!

CHERRY WHITE CHOCOLATE COOKIE CUPS
(My own concoction)
Cherry White Chocolate Cookie Cups
Equipment
- 2 24-tin miniature muffin pans or one 48-tin miniature muffin pan
- 1 large mixing bowl
- 1 wooden spoon
- 1 cutting board
- 1 sharp knife to chop cherries
- measuring cups
- measuring spoons
Ingredients
- 1 1/2 cups salted butter softened
- 1 1/4 cups light brown sugar packed
- 1 1/4 cups granulated sugar
- 1 tbsp. pure vanilla extract
- 2 large eggs
- 2 tsp. baking soda
- 1 tsp. sea salt
- 5 cups unbleached all-purpose flour (bleached flour toughens baked goods)
- 12 oz. pkg. white chocolate chips NOT vanilla chips or premiere white baking chips
- 8 oz. container candied cherries chopped
Instructions
- Spray 48 miniature muffin tins with cooking spray.
- Preheat oven to 350°.
- Mix butter, sugars, eggs, vanilla, baking soda and salt with electric beaters until smooth.
- Stir in flour, white chocolate chips and candied cherries until well combined.
- Roll dough into golf ball-sized balls and place in greased miniature muffin tins.
- Bake about 18-20 minutes or until lightly browned and a toothpick inserted in center comes out clean.
- Rotate pans on oven racks every 9 minutes while baking.
- Cool cookie cups completely in pans before removing to wire racks or a serving platter.

Make sure you look for REAL white chocolate chips for this recipe. NOT vanilla chips or premiere white baking chips. They have no cocoa in the chips so there’s no chocolate!
About the only time you can find candied cherries on sale at grocery stores is the month of December. So buy a bunch and make up a batch or two of these delicious jewels!
