
Sauerkraut and Sausage

Sauerkraut and Sausage is an irresistible dinner option for me! This easy dinner entree includes both bacon and Kielbasa (or Polish sausage), apples, potatoes, sauerkraut and some caraway seeds and parsley to add flavor. It can be whipped up quickly for busy weeknight suppers. It’s perfectly flavored and so delightful to the palate.

I made up 10 or 12 different recipes using sauerkraut with some kind of kielbasa during the spring last year. I made up one or two different recipes weekly and enjoyed every mouthful! I know not everyone enjoys sauerkraut (especially if you didn’t grow up eating it). But made this way, with apples and apple juice, the bitterness of the sauerkraut is tempered with the sweet flavors from the fruit. The savory flavors from the onion, kielbasa and bacon do the rest!
This is one of only two recipes using these two main ingredients where bacon was included in the ingredients. I have to admit I really enjoyed it with the bacon! Of course, everything is better with bacon. The original recipe called for brown sugar and flour so that it made a thicker sauce for the entree. I omitted both of those ingredients to come up with a slightly healthier, naturally gluten free version. I do not feel I compromised taste by omitting either ingredient.
If you need a quick supper idea on busy weeknights when the kids have sports activities or you’re late coming home from the office, this is a terrific option. I couldn’t get enough of it.

This easy dinner recipe can be whipped up in about 45 minutes.

The savory flavors of bacon, kielbasa and onion contrast marvelously with the apples and apple juice in the recipe.
Here’s what I did.

I used these ingredients.

Place bacon in a skillet and cook over medium heat.

Continue cooking and turning bacon slices over until done.

Transfer cooked bacon strips to a paper-towel-lined plate to drain and cool.

While the bacon is frying, chop onions, apples and peel and dice potatoes.

Add onions to the bacon grease in the skillet.

Once bacon is tender, add sauerkraut, apples, potatoes and kielbasa.

Add apple juice.

Sprinkle with salt, pepper, caraway seeds and parsley.

Stir ingredients to combine.

Cook about 35 minutes until vegetables and apples are tender. Garnish with crumbled bacon pieces before serving.

Sauerkraut and Sausage is a wonderful dinner option when you’re short on time.

The original recipe called for brown sugar and flour. I thought the recipe didn’t need those ingredients so I left them out. This turned out delightfully and a little healthier as a result.

The savory flavors from the onions, kielbasa and bacon contrast delightfully with the sweeter taste from the apples and apple juice. The sauerkraut isn’t so bitter that way.

SAUERKRAUT AND SAUSAGE

Sauerkraut and Sausage
Equipment
- 1 large 12- or 14-inch skillet
- 1 colander
- 1 wooden spoon
- 1 sharp knife to cut fruit and vegetables
- 1 cutting board
- measuring cups
- measuring spoons
Ingredients
- 6 slices bacon cooked and crumbled
- 1 small onion chopped
- 2 medium Gala apples unpeeled, diced
- 4 cups Yukon Gold potatoes peeled and diced (see note below)
- 1 lb. Polish Sausage or kielbasa (fully cooked )sliced about 1/4-inch thick
- 32 oz. jar sauerkraut rinsed and drained
- 1 cup apple juice
- 1 tbsp. caraway seeds
- 1/8 tsp. sea salt
- dash of ground black pepper or to taste
- 1/2 tsp. dried parsley
Instructions
- In a skillet, fry bacon strips until crisp cooked but not scorched!
- Drain bacon on paper towels.
- When cool, crumble bacon and set aside for garnish.
- Do not drain grease.
- Meanwhile, while bacon is frying, chop apples and onion, and peel and dice potatoes; set aside.
- In a large skillet sauté onion in bacon grease until tender.
- Rinse sauerkraut well in colander; set aside.
- Add sauerkraut, sausage, potatoes, apple juice and apple.
- Sprinkle with caraway seed, salt and pepper and parsley.
- Stir to combine.
- Simmer for 35 minutes, stirring occasionally.
- Garnish with bacon before serving.

Anyone that grew up eating sauerkraut will love this recipe!

I made ten to twelve different versions of kielbasa using sauerkraut this past spring. I enjoyed every one of those dishes. Yum.
