
Cherry White Chocolate Muffins
I hit the gold mine with this scrumptious recipe. If you think cherries and chocolate go together well, try cherries with white chocolate some time. š Cherry White Chocolate Muffins are sensational. The muffins are filled with candied cherries, white chocolate chips (REAL white chocolate, NOT premiere white baking chips or vanilla chips which have NO chocolate!), applesauce and bananas. They’re moist, flavorful and filled with cherries and white chocolate in every bite.

This is not some Ho-Hum sort of recipe. I tried it out on our church’s Sunday morning Hostess (Usher) Committee a few months ago and everyone raved over it. Literally. And most wanted more than one! White chocolate is more subtly flavored than regular chocolate but it’s absolutely delightful nonetheless. I knew when I made this recipe I would also try the same thing with regular chocolate. Both recipes were fantastic.
For those of you who enjoy fruity muffins for breakfast, this one satisfies. For those of you who want chocolate for breakfast, this one pleases those sweet tooth cravings. It’s a terrific brunch or breakfast idea for holidays, special occasions and a company breakfast. But beware! You’ll be wolfing down Cherry White Chocolate Muffins like there’s no tomorrow. š

Cherry White Chocolate Muffins are sensational!

Get your cherry and chocolate fix with every bite!

While I used Candied Cherries, I think dried cherries, fresh cherries or maraschino cherries will work as well.

These sweet muffins are just what you need to cure any sweet tooth cravings.
Here’s what I did.

I used these ingredients.

Chop up cherries on a cutting board; set aside.

Mash bananas on a plate with a fork; set aside.

In a large mixing bowl, add unbleached all-purpose flour (bleached flour toughens baked goods). Add granulated sugar, baking powder, and salt.

Stir ingredients to combine; set aside.

In a medium mixing bowl, combine applesauce, bananas, egg, melted coconut oil and half-and-half.

Whisk ingredients until the banana is broken up into very tiny pieces.

Add banana mixture to flour mixture.

Add candied cherries and REAL white chocolate chips (NOT vanilla chips or premiere white baking chips).

Stir just until combined; do NOT overmix the batter.

Spray muffin tins with cooking spray. Fill muffin tins until almost full.

Bake muffins at 400 degrees for 17 minutes, or until a toothpick inserted in center comes out clean.

Cool in pans about 5-10 minutes before removing to wire racks to cool completely. Serve!

Cherry White Chocolate Muffins are wonderful for a holiday breakfast or brunch.

For that matter, these muffins are marvelous for tailgating parties and potlucks!

CHERRY WHITE CHOCOLATE MUFFINS
(My own concoction)

Cherry White Chocolate Muffins
Equipment
- 1 12-tin regular sized muffin pan
- 1 6 tin regular-sized muffin pan
- 1 large mixing bowl
- 1 medium mixing bowl
- 1 whisk
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 sharp knife
- 1 cutting board
- 1 plate
- 1 fork
Ingredients
- 1 3/4 cups unbleached all-purpose flour (bleached flour toughens baked goods)
- 1/2 cup granulated sugar
- 2 1/2 tsp. baking powder
- 3/4 tsp. sea salt
- 1 large egg
- 1/2 cup half-and-half
- 1/3 cup coconut oil melted (or use avocado oil or canola oil)
- 1 cup ripe bananas mashed with a fork
- 1/2 cup unsweetened applesauce
- 12 oz. white chocolate chips (NOT vanilla chips or premiere white baking chips)
- 1 cup Candied Cherries chopped
Instructions
- Spray 18 regular-sized muffin tins with cooking spray; set aside.
- Preheat oven to 400°.
- Mash bananas on a plate with a fork; set aside.
- Chop cherries on a cutting board; set aside.
- In a large mixing bowl, combine flour, granulated sugar, baking powder and salt.
- Set aside.
- In a medium mixing bowl, combine egg, half-and-half, oil, banana and applesauce.
- Whisk until well combined and the banana is broken up into very tiny pieces.
- Add wet ingredients to dry ingredients along with white chocolate chips and cherries.
- Stir just to combine. Do not overmix the batter.
- Spoon batter into prepared muffin tins almost full.
- Bake at 400° for about 17 minutes, or until a toothpick inserted in center comes out clean.
- Cool muffins in pan for 5 minutes before removing to a wire rack to cool completely.Ā
